  2. Dreena,What is the proper way to freeze silken tofu? I cannot buy it around here and have to order it. I over ordered this time and I don't think I will be able to use it by the expiration date. I know how to freeze water packed tofu, I can buy that here and I freeze to make TVP. I don't want to have to throw out the silken tofu.
    Thanks for the information. I ordered the soft silken tofu to make the lemon pie in your cookbook. It was delicious and easy.

  3. Lking, I have never frozen silken tofu, probably b/c the shelf life has often been long enough that I haven't needed to. You might want to test freezing just one package and see what happens when it thaws. My guess is that the consistency is going to change, and it will be more watery and separate. Sorry I can't be more helpful on this one - if you discover anything of use, let me know! :) (and glad you enjoyed the pie!!)
