These are one of my first muffin recipes. When I was writing TEV, I remember thinking "I want a wholesome muffin that can be easily switched up with add-ins and flavors". Rather than one muffin that is 'cinnamon raisin', and another that is 'coconut pineapple', and one more that is 'chocolate chip'. I knew that if the base batter was flexible enough, the home baker could adapt as they like. Hence 'As-You-Like' Muffins were raised.
But, most times if you have a basic go-to batter, you can switch up dried fruits, nuts, spices and extracts easy enough. These muffins fit the bill. Best of all, they are light and fluffy and tender (as any good muffin should be)... BUT are low in fat and sweetener (as most muffins should be, but aren't)!

I have a main, base muffin recipe that use when I make muffins and I love it! It allows me to get creative with the ingredients each time I make a new batch. They're moist, yummy, whole grain and just sweet enough :)

I use an adaptation of your muffin recipe and add chopped leafy greens along with dried cranberries and raisins. It's an awesome way to get my little one to eat his greens. Thanks for the great recipe!

made these muffins today!....did the cherry & almond combo...did not have oat flour, and did not want to take out another appliance (i am in the kitchen up to 3 hours a day!), so used 1/2 cup wheat germ and 1/2 wheat bran in lieu of 1 cup oat bran...the other cup was the whole wheat flour...muffins turned out perfect...next time making the tropical version...this master recipe goes into my permanent files!
