Recipe Post: 3-Bean Curry Tomato Soup

This is a soup I have loved for a long time, since I first created it for Vive le Vegan!  3-Bean Curry Tomato Soup.

Why the love?  Well, it's full o' beans.  Just like me.  :)  With all those beans and veggies and spices, you know it is good for you!  And, you feel good after eating it.  Plus, it comes together in a snap, and you'll have enough to freeze for dinner another night.

As much as I love this soup, it's not always a 'first-choice' soup in our house.  Why?  My picky-poo's love to pluck out every visible piece of onion and mustard seed and tomato.  I mean, they are good eaters, but they despise onions and whole spices, and find a way to eat the soup and leave the tomato behind.  :-(

Are your kiddos the same?  I know change will come, but by that time they'll have been through teenage years and I'll be too knackered for cooking!!

My kids are worse, they'll only dip crackers in but not actually eat the soup. I figure it's a start, just to get them used to the flavors. I was really picky as a kid so I know it will get better eventually. It's frustrating in the moment though!

You could always puree all of the ingredients except for the stuff that they like (beans, lentils.) Although you probably wouldn't enjoy it as much! My toddler twin boys are weird- they'll eat just about anything except for meat (which drives my husband crazy and makes me happy.)

I could have sworn that I knew Vive Le Vegan inside and out, as dog-eared as my copy is, but I have never made this recipe! I actually had to go check my cookbook to make sure it's actually in there, and yup, there it is! Will definitely have to make it this week.

And yes, my kids can get picky about little chunks of things in their soups, too. Especially canned tomato chunks. I think it's a texture thing.

I made this for the first time about two weeks ago and I LOVE IT. The husband and kid wouldn't touch it. Oh well - more for me!

My few points of picky-ness (onions and anything that tastes like an onion (leeks, scallions, shallots, chives), raw tomatoes, and avocado) remain despite the fact that I'm well into adulthood, so all I can do is cross my fingers that your girls will grow out of it!

Dreena, that's so funny. I'm 29 years old, and I still don't like visible chunks of tomato in my soup. If a soup recipe calls for diced tomatoes, I'll usually run them through the blender before I add them too the pot.

Oh yes, I love the "picky-poo" description! That describes my boys to a T! Oh well, I keep making them try things and one day they'll like it right? That's what I keep telling myself...and them!

I made this last night and it was really good. I didn't put in mustard seeds though - i don't have any, would I get them in the spice aisle? Anyway, I loved the dish, I thought about pureeing it like another poster suggested, but I didn't and I loved it. Actually we all loved it.

glad to know I'm not alone!!! We can all hope they will (soon!) grow out of the pick-poo phase. Though Jessica, you are squashing my hopes, lol! ;)

Nothy Lane, I'm delighted you loved it! It's even a bit better after having a day in the fridge, flavors settle in even better!
