Anyhow, I got the beet powder at a health food store. If you can get it bulk, that might be best. I got a rather big amount that was already packaged (maybe 2 cups or so), and it wasn't that expensive, but I don't know WHEN I'll use it all up! You really just need to buy a tbsp or two at a time, because you use just a few pinches to tint what you are making. So far with my testing, I have found that you only need about 2 tbsp of batter in the cones (at least that's with the batter recipe I have been using). It doesn't seem like much, but I guess because the cone is so narrow, that the batter only has 'up' to go, and so too much in there ends up overflowing.
