That sounds wonderfully decadent and probably better than the commercial pints out there - you can put all the morsels and chunks and sauces in there as you want - I'd load it up myself!<BR/><BR/>Hi Lucy, carob is the culprit here. Although carob and chocolate chips seem quite similar in chip form, when you melt them and combine with milks, etc, they do not solidify the same. I recommend using chocolate for the topping, and if for some reason you aren't able to eat chocolate, then use quite a bit less milk with the carob chips - maybe just 3 tbsp and see how that sets up. Hopefully it was just the topping that went goopy and the rest was okay. Also, if you use soy milk, you may have better results than using something like rice milk - it's just a bit thicker. Let me know how it turns out if you try them again. And they turned out a goopy chocolate mess. The melted carob chips on top did not harden at all (even after freezing) - which I assumed they should. It tasted okay, but it was so drippy you had to practically eat it with a spoon. Any ideas? Is it because I used carob and not a grain-sweetened chip?
