Vegan Nacho Night
Last night I made nachos for my husband. He loves them, and would eat just nachos for supper. But, of course, I 'balanced' the meal with soup, brown basmati rice, and salad. I don't expect him to eat much of the 'healthy stuff'... just a little. After all, if each of us ate our favorites for supper, he'd have the nachos, I'd dig into a pint of soy ice-cream, and my daughter would be eating artichokes and olives!
I made a small separate tray for my daughter, with just the cheese and olives, and the guacomole was mostly for her. My husband paired his nachos with Tofutti Better Than Sour Cream (this is the non-hydrogenated version).
These nachos are pretty simple, but I'll post the recipe soon!

I love that cake too, I make it for so many parties/birthdays, etc. All non veg's love it, and want to bring some home... I soon will need to make two for parties!

The shopping here is so-so. It's getting better. I usually travel to Oakville (15-20 minutes) and hit Alternatives Natural Food store and they've just opened a Whole Foods store there too. Every few months, my husband and I head across the border. We're only 45 minutes from Niagara. As much as I want to shop Canadian, it's hard to find a lot of decent vegetarian/vegan products here. I will put in a plug here for one of my favorite frozen burgers - Sol Cuisine. They are a Canadian company and their burgers are 100% vegan and delicious. I also think their tofu is one of the best on the market. Anyhow, when we go to the States we take a cooler with some ice packs fill it up and come back. We've never had a hassle at the border and I end up with a freezer full of good stuff. I buy my seiten there and Tofurky "sausages" for the BBQ. But I must say that veg shopping here is getting better and better all the time. I envy you in BC.
C, we do the same living close to the Washington border, although we haven't shopped in the US since our baby was born. I do love to, though. So many different brands and products. I truly am like a kid in a candy store there! We have pretty good shopping in White Rock. As for restaurants, we have nothing. :( Everything is in Vancouver, and that's sometimes too much of a trip!
