5-Star Ice-Cream Sandwiches

Yup, another new recipe. Well, for the cookies anyhow. Making ice-cream sandwiches with cookies is not all that new (and I do offer up the idea for making them in Vive with the Homestyle Chocolate Chip Cookies).

But, the cookie recipe is all new, and when I made them all I could think about is how sensational vanilla ice-cream would be on top! So, I decided to combine them for a recipe in E,D,&BV.

These are indeed 'free-form' as you can see. I don't fuss too much to smooth the ice-cream to make it look just-so. As I've mentioned before, I have limited time for such fussiness right now, and also not too much patience!

So, the story goes...
I made a batch of ice-cream sandwiches.
Gone in a couple of days.
Tested the cookie recipe again (pictured below) and made another batch of sandwiches.
Gone again in a couple of days.
Tested cookies AGAIN. Note: This time I didn't need to test the recipe - it was finished. But you see, we needed more ice-cream sandwiches! They are just so good.



Sadly, there's just one left in our freezer, and I MUST get on to other recipes. Oh, the sacrifices I make testing recipes.

Oh, Leslie and Raising Kahne... does this post make up for my Top 5 mishap? Keep me in that ice-cream club, okay? :)

Dreena, you have redeemed yourself 100 percent. You invited yourself over on my blog (yes, you can come!) but I must say, I'd really like to be at your house with these. They look like snickerdoodles, are they? I think you are amazing for making so many batches. You can send some this way and I'll test them as sandwiches (aka, you bake, I fill with ice cream and eat!).

Seriously, this is amazing and you have just contributed pure goodness to our Ice Cream Club Trio.

Cookies never last long around here, but next time I bake I may have to hide some so I can make those ice cream sandwiches. I can't wait for E,D&BV! Last weekend I made your Apple-Hemp Muffins, but added raisins and cooked it in a loaf pan. It is delicious! My husband didn't even believe that I made it! LOL!

Last night, I made your Peanut Better cookies and added vegan chocolate chips. (and a bit of oatmeal since I added too much PB to the batter).. omg.. amazing! I LOVE baking vegan cookies and passing them out to my kids and their friends.. they all love them. I make a point to say, "vegan food can be delicious"... and educate them when I serve them..
I will post the pics today of the cookies in my blog.

Amy, these are 5-spice almond cookies - I did neglect to mention that, didn't I! :o) - hence, the name of 5-star cookie sandwiches!

Well, thank you Leslie (and Savanna), for excusing my earlier - atrocious - behaviour!! ha! Leslie, I think if we ever spent time together we'd make ourselves sick on sweets - happy, but sick! These aren't snickerdoodles - you know, I've never even had a snickerdoodle! I know what they are, but I've never had one. They are definitely a US thing, not something seen/heard of much in Canada. They are a 5-spice almond cookie with u/r sugar sprinkled on top. Very sort of 'comforting' kind of taste! (esp with the ice-cream - of COURSE)!

I love that you are sharing the cookies and showing people that our foods are tasty - there are FAR too many misconceptions out there about our diet. Re the hemp seeds - yes, hemp seed "nuts" is the sometimes used (myself included) 'proper' name, while most people actually refer to them as hemp seeds. Just be sure the seeds are SHELLED. Most are. I don't usually see them 'unshelled', but I have heard that they are out there as such (probably in bulk at some larger health stores). I mostly buy Manitoba Harvest brand, and their bag says 'shelled hemp seed' - oh, and the larger print says "Hemp Seed Nuts" - even one company uses both terms interchangeably. I'm excited to hear what you are doing with the hemp... and thank you for that post too about the cookies! That was GREAT!!! Why don't I take some of my pics on my book cover like that??!! I like that you added oats to the cookies too - probably helped with the extra yield (well, along with the smaller cookies). Smaller cookies you can feel less guilty about eating 3 or 4 of, right?! :) Again, that was very cool to put in your post... thanks!

Dreena, I have the best sweet-non-oven-ideas. I hope to fix that soon, as I used to make the best banana bread and coffee cake. Anyway, if we spent time together I bet it would be a blast, eating and not eating! I can't believe you've never tried a snickerdoodle. Like a sugar cookie but with cinnamon and maybe something else that makes them amazing. The alternative baking company makes a monster size snickerdoodle that I have to stay away from (and I pretty much do). They are good if you have that company there, or I know they have them all over online. That's the only vegan one I've ever had. My mom used to make them like mom's make chocolate chip cookies (unvegan at the time, yuck).

These look delish Dreena. I wish the fridge fairy would bring me a new fridge, one with a freezer that actually keeps ice cream cold enough so that I could make all your fabulous frozen desserts. If anybody sees the fridge fairy ask them to bring me a new fridge. I promise fridge fairy I would cherish the gift.

And your cookies i know from what i've seen, that they are even better than Uncle Eddie's! Yes, of that i'm sure... and i know i've gotta make yours one of these days when i get up the nerve! ZOINKS! i'm so bad in the kitchen...

I've lurked on your blog for many months, but this is my first comment. I just wanted to say that your last few posts are so mouth-watering and delicious. Cool weather looks like it's coming early to my area, so I probably don't have too many visits to the farmer's market left, but apple season is just beginning! Also, I thought of you yesterday, because I visited Farm Sanctuary and your cookbook (Vive) was displayed front and center in the gift shop, and I heard someone's comment about "best cookies... cookie addiction..." something like that! ;-)

Leslie, I would love to see some of your "oven food"! Are the coffee cake and banana bread recipes your own? It was the coffee cake that got you into this trouble in the first place, right? Time for that cake to redeem itself, I'd say!

Oh, Kleo, my cookie recipes are a cinch - REALLY! The choc chip ones, and pb ones - easy stuff, just need to mix up the ingredients by hand, form into little cookies and bake up - super easy. I am not into complicated baking, so try 'em out sometime... I know you can! :) (and then you can experiment with as many cookie sandwich variations as you like)!

Thanks Urban Vegan! It was really cool that you posted that story and info. I can't wait for our daughter to see the photo and get the information. I told her we would put the rabbit's picture in a frame. When I get it, I'll be posting about it!

You know what's so coincidental about your note here is that we *just* adopted a rabbit (on the weekend) from Farm Sanctuary after I read urban vegan's recent post. Yeah, our daughter was not quite 3 when we did that photo shoot. She had changed so much now! Both our girls keep me runnin' most of the day... the younger one is even busier than our first was at that age. It's amazing I get through the days - ha!!
