Cookie Neglect!

Shame on me! How long has it been since I've posted about cookies?

Biscotti and Bundles excluded, it's been well over a month. Just plain neglectful of me!


Aren't these pretty and just the picture of sunshine? They are Lemon Cornmeal Cookies, and whoa!... these are not only dairy, egg, and wheat free... but are also gluten-free! I'm still testing through these, as I've been tinkering with some gluten-free cookies the last week or so.

You know, after I finished my recipes for the book, I thought "okay, now I can chill on the recipe testing". But, it's in my blood! I love to experiment with things, and so here I am again playing around with new recipes. I was actually inspired by an e-mail I received from one of you about whether ED&BV will have gluten-free recipes (and cookies). It will have some gluten-free recipes, one of which is my Homestyle Chocolate Chip Cookies - gluten-busted! These Lemon Cornmeal Cookies are completely new, however and will not be in ED&BV.

I cannot fathom producing another cookbook (heck, ED&BV isn't even off the press!), and I think my husband would choke if I even muttered the words "another book". So, what to do from here? Maybe I need to start a newsletter or something. We'll see. (I think I need 'cookbook-author therapy'!)

For now, I'll play. And share photos and recipes with you.

Mmmm! Lemon & cornmeal can only be improved upon by the addition of blueberries! Yummy! Hope you'll publish this recipe!

hmmm... what does a cookbook author do when not writing cookbooks???

here's a suggestion...

develop food products that we can enjoy when we bring them home from the supermarket?? ;) Ready-made Dreena meals?? Hey, it's NOT a bad idea! What think the other blogger readers? (I know right? I'm a total little stinker. But peer pressure is very effective.)

OH MY GOODNESS! Those cookies look so refreshing for these hot summer nights. Please start a newletter or something. We can't live without your wonderful new creations and recipes! I will be glad to test these for you!

I just made your Tofu-Lovin "Sandwiches"in the August VegNews.We love it. I will get pics posted along with a review in the next couple of days.

Oh those sound soooooooooo good! Husband be damned! You have an adoring public out here that has to be catered to. If the masses demand another cookbook, then it's your duty to provide one. Kinda like the Queen. I'll curtsy, say yes ma'am, speak only when spoken to, the whole deal. And just think.....you could wear a crown!

*sigh* OK, maybe I was a bit carried away with the excitement of it all. I'm sure your husband is a dear, sweet man, so I take that back. (Sure you don't want that crown? It's all pretty & sparkley). I think a newsletter would rock! Or even just doing what you're doing on your blog is pretty cool too.

oooh, Aimee, nice suggestion, I will have to try some dried blueberries as a variation in one of my next batches. Sweet!

Sis, I'd jump on the idea if I knew where to start. Or, rather, if someone came to me saying "hey, we want to produce and market your cookies"... OKAY!! That would be a hoot! And you are a little stinker, but not because of that idea. :) :)

Hi liliy, maybe we should get my younger sis to search out a company that wants to manufacture my goodies... sounds good to me! (because I must not mention another cookbook again for a long, long, long time!)

Veg-A-Nut, what a treat you are! That's very sweet. I *do* have to think of where to go from here... a newsletter, cooking classes, or something else. We'll see! (oh, and I'm super glad you are lovin' the sandwiches!)

Denise, I'll work through the testing as quickly as possible! (though I just checked out your blog and I think you've got gluten-free baking deliciously squared away - those graham crackers look fabulous). :)

ha, ha Carrie... you are TOO much!! Phooey on that husband of mine, and imagine how much he'd dig that sparkly crown of mine? I'd have to share it with the girls though. I don't share crowns well - or ice cream. :) Thanks for the chuckle on a Sunday morning, and now I'll keep my mouth quiet about cookbooks - like I said before - for a loooong time! Do I still get the crown for a newsletter? :)

oooh, i could never steer you away from another cookbook ;) but a newsletter or something sounds great too! you've just got it all going on these days, huh? 3 cookbooks, a dvd, writing for VegNews, all on top of raising 2 stinkin' cute little vegans????????

you know, i'd love to see you and your books featured on some shows.. like Cityline, or Rachael Ray, or something! spread the vegan love!

Seriously though, sounds like your 'problem' is really not a problem at all - after all, it's healthy and fun and entertaining for us!

I know how you feel about cooking being in your blood. If when things get hard cooking always helps... I don't even need to eat what I make. I just want to create something. Lord what knows I'd do without a kitchen! :)

I would love the recipe for these,I am always searching for new recipes for my son Connor who is 8 who has many food sensititivies. He would love these.

Do you, or anyone else know of a brand of marshmallows that does not have food colouring and artifical flavourings in it. Every bag I have found has both and he gets very sick from both. We are camping with some families next weekend for 3 days and I would like him to also be able to enjoy roasting marshmallows by the fire. I would even make some if anyone has a recipe. Thanks soo much! Keri

Oh wow - there is rarely a cookie recipe that I look at and don't want, but this is one that I actually stopped short to imagine eating! So light and summery!

Hi Keri, have you tried the "Sweet and Sara" brand of vegan marshmallows. They are available by order through vegan essentials (and other places - go to sweetandsara.com). They do not have any artificial colorings or flavorings. So, unless your boy is allergic to some of the other ingredients like carrageenan, they might be okay for him. If you go to veganessentials.com, you can get the ingredient list. There is also another brand of marshmallows you can get through vegan essentials - Vegan Sweets. They aren't as $$ as Sweet and Sara, though imo, the Sweet and Sara are more like 'real' marshmallows. Good luck!

Any way you'd part with the recipe now? The cornmeal cookie recipe I tried to convert to vegan failed...yours are beautiful. I need the recipe for a large event on a univeristy campus...
