Chickpea Sensation Patties

Unlike my last post, these patties won't hold up on the grill. But that shouldn't keep you from making them, because these Chickpea Sensation Patties from ed&bv are really delicious.

They are a combination of chickpeas, brown rice, and oats blended with sauteed veggies and seasonings including thyme and a scattering of capers. And this is how I like to eat them - not in a bun, but served on their own, with warm Balsamic Maple Sauce (*get recipe through vegan.com link, scroll down after rolls) on the side. They are just so moist and flavorful, that for me, a bun (or wrap or pita) is just not needed. Instead, serve a side of spuds with these patties - like Lemon Rosemary Potatoes from Vive, and a salad. You can't go wrong with that.

Then, if you're needing to keep that sweet tooth happy, maybe a reminder that it's time to bake up a mountain of Homestyle Chocolate Chip Cookies like so...

These patties are my absolute, hands-down favorites! I make them all the time and always have some in the freezer! (Although I always bake them instead of pan-fry). I've tried the recipe as written and so many different spice/veg variations and they are always perfect! A seriously great recipe!

Wow, it's like a post with all my favorite foods! I love the chickpea patties, and I would agree that they are definitely a sensation! And, of course, the chocolate chip cookies are the only ones I ever make. One (omni) friend even said that they rock her world. I agree!

I have no idea why I still haven't tried those chickpea sensation patties. I did make your Moroccan Chickpea Patties recently and boy are they scrumptious.

And those chocolate chip cookie... ah, those are my favorite cookies. I don't think there is one cookie I made that often... So good!

You would be happy to know that my 19 yr old saw me reading your website with the pic of your chickpea patties and asked me to make them tonight. Of course I did and I added your Blueberry-Orange Chrisp Cake. I used lemon rind instead of orange and we did put the patties on a bun with a beautiful tomato and a perfect avacado. Every omni in my house loved it. I am just so pleased there are leftovers! But I have to hide them or the 19 yr old will clean me out. I love leftovers. Someone mentioned freezing them. When you want some do you thaw them out or just heat them up in the oven?

Reply to Robin about freezing...I usually take one with me for lunch so I take out of the freezer and put in fridge at night then pack on bun with tomato in lunch box. I eat them cold/room temp! If it's still a little too cold at lunch I'll pop in microwave for 20 seconds. Hope that helps!

Robin, if the patties are frozen before cooking them, I tend to thaw them most of the way - take them out of the freezer in the morning, if you know you'll be having them that evening. Then, they should be thaw most or all the way through. You can also put them in the fridge overnight to thaw for the next evening. They should fry just wonderful then. If they are a touch frozen still, it should still be okay, but I wouldn't fry straight from frozen. If you've already pan-fried them, and then freeze them, they should be fine to reheat in the oven either from frozen or after thawing through. And... your 19 yr old has good taste I think! ha! ;) Seriously, it's very cool that you were encouraged to make a vegan dish by your child - the good habits are getting passing down! (I too make that cake with lemon instead of orange sometimes - the lemon/blueberry combo is so refreshing and irresistible!)

This was the first thing I made out of your book (I know it's your third, but the first one I purchased). They were a HUGE hit with everyone except my EXCEEDINGLY picky 8yo son. I loved them that night, I loved them the next day mashed up with some vegan mayo. And they were so easy! Thank you, thank you, thank you!!!! This is now my "go to" cookbook of first choice every time.
