Soy-Free Veggie Meatloaf

When I took recipe requests many months ago, I had some serious pleading for meatloaf recipes. Surprising to me, because I had thought that the veggie meatloaf recipe had been done - and then done again. But, I realized that most of these veg versions included soy of some form... be it tofu, tempeh, tvp, or veggie ground round. So, I decided to concoct a very healthy, and soy-free (for soy-allergic or sensitive folks) version. This one uses lentils and bulgur as the base, and also includes seed butter and salba (or flax). Plenty of nutritional biggies in this one!

So, are others out there looking for similar recipes?... hearty dishes like "meatloaf" but not using soy products? Also, can someone please offer up a decent name for this recipe (& one that doesn't use the word "meat") ?!! :)

    Great alternative. I must tell you that your homestyle cookies were the first vegan cookies I ever made and no chocolate chip cookie beat that since. It is almost midnight and I could eat that meatloaf right now.

    COOL!
    not because i dont eat soy, but i made one with tofu before and i was dissappointed.[even though ive never eaten real meatloaf] now i only tried making vegan meatloaf with tofu once, but this sounds more appealing to me. yay!

  5. looks delish, dreena! p.s. i basically sold ed&bv to a customer at my local bookstore b/c she was looking for a good cookbook with healthy recipes for pregnancy! the lady at the store knew nothing about veg cookbooks, so i stepped in! :)

  6. Being soy allergic/intolerant (I'm not sure which) I'm always on the hunt for alternatives to tofu/tempeh. This one sounds yummy!

  7. wow that one looks super tasty. I'd call it something like Not Your Mamma's Lentil Loaf. I wonder if it would work with brown rice instead of bulgur? As for recipes I'm interested in seeing, anything gluten free, as so many vegan recipes rely on seitan or other gluten-filled foods that I can't eat. Thanks!!

  8. I'm certainly interested in more soy-free recipes. As for the name, I think Gaile's idea of "lentil loaf" is good. I've always hated the word "meatloaf"--it sounds disgusting!

  9. Hmmm this sounds interesting, as long as the mystery red topping does not contain ketchup. God I hate ketchup. The reason I never tried mom's meatloaf in my pre-veg days was the pungent odor of the ketchup sauce. Then again i'm sure you could substitute it for something delicious.

    On another note I have Cashew-Ginger Tofu marinating in the fridge, only I had to use almond butter. I'm wondering what it will taste like, but I'm optimistic.

  14. I'm. Totally. Drooling. Seriously who needs meat? Or fish? Or any animal products for that matter!

    I have so many friends who say "I'm vegetarian, but I only eat fish and chicken." BS!

  15. i do a "meatloaf" with lentils and steel cut oats that hits the spot. not big on soy, either... aside from tempeh.

  16. Since it contains bulghur, why not call it "wheatloaf"? Lentil wheatloaf...if you want to get more specific...

    Gaile, that's a good idea, I might try it out with brown rice since I'm not eating wheat at the moment (b/c of breastfeeding).

    Marie, sorry to break it to you but yes it's ketchup. You didn't even like ketchup as a child? WOW! Our girls could eat the stuff with a spoon - it's actually gross how much they can consume - and ridiculous how often we have to say "no more ketchup"! Well, you could always use another sauce to top the meatloaf - bbq, worcestershire, gravy, etc - or just a brush of olive oil - I'll make that note in the recipe too!!

  20. Veggieloaf makes perfect sense. Isn't "veggie meatloaf" - if it means vegan loaf - an oxymoron? Veggieloaf, meatloaf... uh, yeah... just take out the meat part, considering that "meatloaf" is a word based on something non-meat anyway (bread).

    Veggieloaf! Lentil loaf also sounds nice, but all the American junk foodists will probably think that sounds pretty gross.

  26. I thought this was a contradiction at first, but once I saw Salba in the recipe I did not mind at all. :) Thanks for sharing, I've been on a real Salba kick lately, so I hope you post more recipes with Salba!!
