MONSTA! cookies

Really quick post today, as I'm up to my eyeballs this week!  But, wanted to share this pic of another new cookie recipe.  These have really good-for-you stuffins' like whole-grain flours, coconut, hemp seeds, sunflower (or pumpkin) seeds, and only maple syrup and brown rice syrup as sweeteners.  Not a dessert kind of cookie, but a satisfying, toothsome, slightly sweet pick-me-up that hits the spot just when you need it!

I make these bigger than my standard drop cookies, and when I was scooping these on to my cookie sheet, all I could think was "these cookies are MONSTA"- in size and healthy ingredients.  That was it, the name stuck - Monsta! Cookies.

Plus, I think the cute furry bloke that taught us "C is for cookie", would approve (of the name and the cookies).  And that's good enough for me.

These look delicious -- and just the thing for an after-school snack with a glass of almond milk. Is this a recipe for a new cookbook?
