Vegan Banana Oat Bundles


These little bundles of oaty-banana goodness are unbelievably easy and quick to make.

The recipe is from Vive le Vegan!, and combines common ingredients - overripe bananas, quick oats, cinnamon, nutmeg, salt, baking powder, vanilla, unrefined sugar and canola oil. That's it!

The batch makes about 10-12 mini-muffin sized bundles, which are more of a snack than a cookie. They are just a little sweet and make a perfect mid-morning or evening nibble.

Next time you have overripe bananas, try making these instead of the usual banana bread!

The only fruit I don't like is bananas! They are alright in bread but I can't eat them plain. I don't even like the smell. These look good, though. I've never had banana cookies...maybe I would like them. Are the over whelming with banana flavor? LOL

That's funny, Harmonia... I've 'heard' of people that really hate bananas, but you're the first person I've talked to about it! You can certainly taste the banana flavor in them. If you really don't like bananas, you could try substituting some applesauce, either the full amount or 1/2 the amount of banana with applesauce. It's 1 cup of pureed bananas, so that might be a LOT for you! :) The sweetness will come down some using the applesauce instead of banana, so you may want to add another TB of unrefined sugar to adjust the sweetness.

These are mine and my fiance's favourite cookies! When I make them, we tend to eat them all in one sitting....

I don't think they taste overwhelmingly like banana - less so to me than banana bread does.
