Oven Bake Chickpea Curry
Pictured is Sweet Curry Chickpea Casserole served with brown basmati rice and a salad. From Vive le Vegan! , this recipe requires almost no oven attention!
Although the colors in this dish become subdued through cooking, the flavors do not!! A unique combination of chickpeas, sweet potatoes, apple, lite coconut milk, fresh seasonings and spices are baked in a covered dish for about an hour. You need to stir once through baking, and that's it!
A good squeeze of fresh lemon juice adds a lively, fresh finish to this dish, as does a sprinkle of chopped cilantro or parsley. Stay tuned... tomorrow I will post my "leftover makeover" of this dish!
