Roasted Tomato Bean Stew

A very good friend made this soup recently for her family and they loved it. I thought "hmmm, why haven't I made this for a while... we love it too!".

So, I made a batch and it definitely hit the spot! Rich with flavor from herbs and seasonings, this Roasted Tomato Bean Stew is also hearty with both wild and brown rice, and beans.

I use Muir Glen Fire Roasted Diced Tomatoes in this recipe, however you can use regular diced tomatoes and then add in extra seasonings as I've noted in the recipe (p.78 Vive le Vegan!).

By the way, although this photo shows fresh rosemary and bay leaves, the recipe uses all dried herbs. My rosemary and bay trees are two of just a handful of herbs that are growing well in my garden. (I lack a green thumb, and thankfully these herbs aren't requiring one!)

I just got Vive Le Vegan from the library. Any suggestions of which recipes I should try first (they have to be gluten free or have gluten free options, so most baked goods are out)?

Well, I'll give you a list of some of the gluten-free recipes that are some of my favorites:
- Cannellini Bean Yam Hummus (and also Creamy Hummus)
- Lemon-Herb Tofu
- Chipotle Corn Black Bean Soup
- Three Bean Curry Soup
- this Roasted Tomato Bean Stew (though you would have to find hoisin and vegan worcestershire without wheat)
- Chickpea Ratatouille
- Lemon Rosemary Roasted Potatoes
- Basmati Greek Rice
- Brown Rice Pizza
- Sunflower Lentil Pie with Sesame Mustard Tahini Sauce

Also, the Totally Nutty Bars are in the Muffins/Snacks section and are gluten free, whereas most of the muffins/baked goods are just wheat-free.

hey dreena, made your Chickpea Ratatouille for supper tonight, and it was really good! everyone ate it all up, and there's some leftovers for lunch tomorrow... might try your idea of making it into burritos w/ some vegan cheese.

also made your Oat bars, and hubby ate half them up right away, so i will be making them again tomorrow (note to self, double the recipe due to hungry hubby ;P)

Hi Michelle... well, thanks for the warm and fuzzy compliments, much appreciated! Also my thanks for featuring my recipes on your blog!! I love the Chickpea Ratatouille myself, one of my favorites, esp when I can make it with chickpeas that I have cooked in advance - they just taste so much better than the canned - but I'm not always that prepared with the kidlets (as you know I'm sure!). The oat bars are great too because they aren't too sweet and are very wholesome and filling.

This is the best looking soup ever. I don't know why but I'm salivating just looking at it. :)

I'm going to break down and buy a few cookbooks that I've been drooling over for a while. It seems Vive le Vegan is more popular than The Everyday Vegan? I'm on a tight budget so I want to pick one. I cook with whole foods, veggies grains, etc and with baking I never use sugar or processed flours. Which do you think would be better for me? Some of these recipes look so darn good I think I'm going to have to go with Vive le Vegan. :)

Mal, I'm really into sweet potatoes right now - making sweet potato fries and yam fries. I think it's the time of year, they are very comforting. I esp love having them paired up with spicy food like chili - yum!

Hi Miriam! Vive is my newer cookbook, so I probably have a tendency to feature more recipes from it! Both books have sold about the same, but Vive is more popular now for sure because it is more recent. I think Vive is the best choice for you for a couple of reasons..
First, the recipes really utilize whole grains, legumes, nuts/seeds, and veggies. They are not heavy on soy, though there are some soy recipes in there (mostly in the desserts). Second, there is an entire chapter devoted to "Feeding your Vegan Baby and Toddler", which I think you would find very useful when your little bumbo joins the outside world and eventually begins solid foods!! :) This chapter has a food introduction schedule to limit allergic reactions/food sensitivities in babies/toddlers, and I give examples of how I prepared food for my kids through the different stages (ex: 6-9 mo's, 9-12 mo's, etc). I used it with both of my kidlets (still doing so with our 14 month old), and it was designed by my naturopath. Just so you know, neither of my cookbooks use white sugar. Just natural sweeteners and unrefined sugar. Also, most of my dessert/baked goods use whole-grain flours rather than white flours (with the exception of some cakes which are treats and really benefit from lighter flour). Overall, though for you I think Vive is certainly the best bet! Hope that helps... :)

I am embarrassed to say that I don't have your cookbook yet (I haven't been able to find it locally) but I might try the library here - haven't been there in a while. OR I will have to buckle down and buy it online. I try and shop local but when they don't have what I want - what else can I do?

Can't wait to see it.

Yeah, check it out at the library if you can get it. Then, if you want to get it, you can always ask your local places to bring it in for you... that way you are still giving them your business! (although you will probably get a better price through amazon - that's the toughie!)
