Vegan Waffles
This is my 4-year old's second favorite breakfast (#1 is pancakes)! Waffles slathered with almond or cashew butter, then generously topped with organic unsweetened applesauce, and a drizzle of pure maple syrup. We like Nature's Path Lifestream line of vegetarian waffles, specifically the Buckwheat Wildberry flavor which is also gluten-free!
She usually has fresh fruit alongside, and a drink of fortified rice milk. This breakfast is definitely substantial and nourishing for your little one, and it is fast to make! Plus, who can resist food on a Dora plate? :)

Thanks ladies! The applesauce really softens up the toasted waffle, I think that's why my daughter loves it so much. You would have to use a fair amount of maple syrup to do the same thing, and I'd rather not give her all that extra sugar, even if it IS pure maple syrup!

Oh, by the way, I regularly make those with barley flour (or spelt), if you want to avoid the wheat.
I wish I would have read this post earlier. I just ate some Buckwheat Wildberry waffles with plain ol' Earth Balance and maple syrup. This sounds so much better. I will have to give it a try tomorrow.
