As-You-Like Muffins

These are my As-You-Like Muffins from The Everyday Vegan. This is a flexible recipe where you can add your favorite extras (dried fruit, nuts, carob chips, etc)... hence the name! I do offer some suggestions in the sidebar of my recipe, such as a tropical theme including dried coconut, pineapple, and coconut extract.

I added raisins and sunflower seeds to this batch (seeds instead of nuts since the baby isn't eating nuts/nut butters yet). I also substituted barley flour for the whole-wheat pastry flour (baby also isn't eating wheat). There is a cup of applesauce in this recipe, which helps keep the muffins moist and allows for less oil - there's only 1 TB of oil in this entire batch of 8-10 muffins!!

Since Valentine's is approaching I used these heart-themed liners I picked up at a dollar store, and I told my daughter they are "love muffins". I plan to make some cupcakes for hubby using the same liners and will post those pics later.

Those look really good! I was surprised how well barley flour worked when I made the Orange-Poppy Seed Muffins from Vive. I couldn't tell any difference (those muffins were really good, btw).

Those looks beautiful, and delicious! I like how you often substitute barley flour. I imagine I'll be wanting to hold off on wheat with my baby too.

I'll be ordering my cookbooks very soon. Yes, I decided to go with both. I'm hungry for new 'reading material'. :)

What a great blog! My first visit, and I'm very grateful to "Shmoo Chick" as I respectfully refer to Jennifer of Vegan Lunch Box fame for pointing me in this direction. You two have got it going on.....of course now I'm forced to go out and buy two more cookbooks................give a poor girl a break. Soy Delicious is so good that if everyone was issued a pint of this stuff at lunch everyday wherever they were, the world would be a MUCH better place!!! I love the Carob Mint too!

Sarchan, I'm glad the barley flour worked for you in that recipe. It's really a great wheat substitute!

Hi Miriam - yeah, I use spelt and barley flour a lot - just for extra variety from the wheat that is in a lot of our breads, etc. Once you get TEV you will notice that the baked goods use whole-wheat flour and pastry flour, but you can sub spelt and barley flour in most. With Vive, I note which recipes are 'wheat-free', and they use barley, spelt or ground oats. You will see with the food introduction schedule (if you use it), that wheat isn't introduced until 18 months because it is more allergenic than other grains. There is some flexibility with the schedule, since there are often earlier signs that babies have food sensitivities and you may find you can introduce some foods sooner, but still it helps to use it as a guide. I do, and my kids didn't have digestive issues like gas, constipation, etc, or skin rashes, etc. I hope you find it useful with your little one on the way...! :)
