Chocolate Pnut Butter Cookies

My affection for the Peanut Butter Zig Zag Soy Delicious ice cream (posted Feb 7th) inspired me to create these new vegan cookies.

Like all peanut butter and chocolate combinations, they are "more-ishly" delicious! And, like most of my sweets they are made without refined sugar and flour (these made with sucanat and barley flour).

These will be a new recipe in my next cookbook, and I would love a suggestion for a name. Coming up with recipe names is not a strength of mine! While I'd like to just assume the ice cream name, that's not an option... so, any ideas?

P.S. A note to my fellow Canadians feeling left out on some of the US flavors... Turtle Mountain informed me that by the end of Spring, several new flavors will be introduced in Canada!! These are Rocky Road, Turtle Trails (YAY!), Mint Chip, and Mocha Almond Fudge. They also encouraged US residents to visit their website for coupons and fill out their online survey for a chance to win a year's supply of ice-cream! Wow!

Haha! I was thinking the EXACT same thing as Chris. How weird is that?
Chocolate and peanut butter is one of my all time favorite combinations. I'm drooling. Can't wait for the cookbook! Hurry Dreena! Write fast!

Jess, that's good feedback, thanks. I too want more pb in the zig zag. I made another batch of these yesterday and added just a bit more pb. I think I'll add even more next time - thanks! By the way, your pb sauce on your blog with all those sauteed veg and just right tofu - very yum!

wanted to let you know that i tried some soy delicious.. mint fudge. figured if i didn't love it, the kids would.. but you are right, vegan ice cream has come a long way! didn't taste tofu-y at all!
