Hummus Tortilla Pizzas

So, with all that hummus last week I decided to make my Hummus Tortilla Pizzas Friday night. This is such a versatile, simple recipe, and if you love a thin pizza crust (like I do!), well, you can't get any thinner than a tortilla!

While I list ingredint toppings in this Vive le Vegan! recipe, you can really use what you like... it's pizza, after all! Here, I used a few rings of green pepper, chopped sun-dried tomatoes, sliced kalamata olives, chopped fresh pineapple, and black pepper. My gosh, the fresh pineapple was terrific, giving excellent flavor contrast to the saltier toppings. After baking, I finished with a sprinkle of chopped cilantro and drizzle of extra-virgin olive oil.

Next time you have a big batch of hummus to use up, customize your own tortilla pizzas!

Tip: Spread your hummus thicker on the edge of the pizza, and thinner in the middle. The tortilla shell sometimes gets a little soft in the centre if you assemble your pizzas in advance (be sure to refrigerate if doing so) and if your hummus is less dense. This helps keep the crust crispy (be sure to prebake the tortilla shells before adding toppings, as per recipe!)

I've never made a tortilla pizza before. Back when I could eat gluten, I used to love pita pizzas.

I know these are supposed to be Hummus Tortilla Pizza comments...but, omg--I just made the Homestyle Chocolate Chip Cookies from Vive! They were beyond good!! I just recently made Chocolate Chip Cookies from another well known vegan cookbok--and they were ok-but, sooo sugary and the dough was crumbly. These beat them hands down! These cookies will definetely be in constant rotation!

We do something similar, we put hummus on a tort, add desired veggies, fold and toast in a pan. So, I guess it's more of a burrito :D

Yummers! I tried to make hummus with cannelli beans...yuck! Why? I didn't have any chick peas at the time...never again. That will teach me to not stock up!

Hi Melissa - please let me know how you liked the pie, and if you had it with the tahini sauce. The leftover pie is also good mashed a little on sandwiches (though I have to try your mashed chickpea sandwiches - they looked super!)

Danielle - I have heard of spelt tortillas, though I haven't seen them where I live. I know spelt is out for you (though it's an alternative for any of you out there than can't have wheat). You could also try the pizza with corn tortillas. The crust might be a little too crispy, though - I'm not entirely sure. Can you get gluten-free pitas or pizza crusts where you are?

Thanks, Carrie, that's sweet of you to say. I have always liked thin crust pizzas, so I have often used tortillas as crusts. But, they would usually get soggy with tomato sauce. Then, I thought about using hummus, and no more soggy crusts. You could even dollop a little tomato sauce on top of the hummus layer if you want that tomato flavor there!

Hey Michelle, I noticed on your blog that you were prepping for the roasted garlic mushroom sauce from TEV. (FANTASTIC pointers from you, by the way!) I'm awful curious to know if your kids ate the pasta with all those mushrooms and roasted garlic, etc. If so, I'm sending my daughter to your house! :)

sdgvegan - that's a great suggestion. I make variations on burritos a lot, and if you have veggies and hummus on hand, well, you can season as you like and wrap that up in a tortilla. Thanks for the tip!

Hi Sarchan! That's one of the reasons I love doing this blog. I can share some pics of the recipes when I never would have been able to include them all in my books.

Harmonia, don't despair!! You can make great hummus or bean spreads with cannellini beans, or other beans. I have a recipe in Vive for a hummus with cannellini beans and it is one of my favorites. You sometimes just need to alter the seasonings. If you want to try it again with cannellini beans, I'll try to give some suggestions that might help. Those stocked up beans can be saved! :)

I can get a couple brands of gluten free pizza crusts. I tried one of them and it was absolutely dreadful - it tasted like cardboard. I've never seen gluten free pitas...

I don't think that corn tortillas would work all that well for a pizza.

dreena, it's pretty rare when the kids don't eat whatever we're eating. we've hardly ever even toned down the spices for them.. they love garlic, chili spices, even spicey curry!

the only thing that they've refused to eat is: DS won't eat raw tomatoes (cooked are okay) and DD won't eat raw spinach (cooked usually okay)

i am so lucky that they are not picky. one girl i babysit is SUPER picky and it drives me crazy!!!
