Vegan Peanut Butter Cookies

I broke away from making my chocolate chip cookies this weekend to make these Peanut "Better" Cookies from Vive le Vegan!

Now, if you liked my Homestyle Chocolate Chip Cookies, and you like peanut butter, you'll love these!

They are very "peanut buttery", because just as you finish mixing the batter (again, just need a bowl and spoon), another 1-2 TB of peanut butter is very lightly swirled in before spooning onto a cookie sheet. This gives an extra pb hit for those of you who love that peanut buttery taste (you know who you are)!

Idea: Sometimes I break off chunks from a dark chocolate bar and press a piece or two in the centre of a few cookies just before baking. That way, you have some classic pb cookies, and some chocolate chunk pb cookies!!

I was wanting to make these soon--thanks for posting a picture of them. I do love those Homestyle Chocolate Chip Cookies--I guess I can go without them for one week, though, to make these! I love how the recipe for these cookies is basic--and I already have the ingredients on hand.

okay, dreena tells me to make cookies, so i go make cookies.. actually, i made a double batch. so when my hubby gets home and sees we are overflowed with cookies, i'm pointing him in your direction LOL .. not that he will complain!

Yes, Julie, give them a try... and if you are still wanting the chocolate kick, throw a handful of choc chips in the batter! :)

Harmonia, I have a few "one-pot" dishes in my book that you get everything prepped for and then pop in the oven and let the oven do the rest of your work. The Chickpea Ratatouille, Sweet Curry Chickpea Bake, and the Greek Basmati Rice are a few examples. Some of my pasta sauces are quick/easy too, like the Tomato Lentil Pasta Sauce and Walnut Basil Pesto (great when basil is in season... come soon, spring and summer!!!)

Michelle, that is too funny! If only I had that power, I would walk through the grocery store and quietly whisper "don't buy the meat or cheese, go cook some beans and rice... eat vegan"! My daughter did just about that the other day. She was shopping with her dad and they walked past the lobster tank (so sad), and she shouts "don't eat lobsters, don't eat lobsters!", then, they walk further past the wrapped raw meats (ugh!) and she shouts "don't eat meat, don't eat meat"!! I love it! Anyhow, I hope you and your hubby like the cookies! :)

OK, the first step in getting help is admitting you have a problem. I do. I'm one of the ones you're talking about in the quote above. When I was a kid, my mom made the best peanut butter cookies ever. Your's look pretty good too. Hmmm, could they be better than Mom's? Only one way to find out. It's such a sacrifice, but, geez, someone's gotta do it. I guess I'll just have to volunteer.

I love almond butter. I have a recipe for nut butter cookies from another cookbook that I just have to make again. I'm going to have to ask for your cookbooks for my b-day in July if I can't get them before then.

And I absolutely toss in chocolate chips. Yum!

Hi Danielle, your mention of almond butter brings up a good idea. Some people that have a peanut allergy can eat tree nuts (almonds, cashews, etc). Almond butter or another nut butter could be substituted for the pb here. I haven't tried it measure for measure, but the texture is so similar. I think I will test it out. A sprinkle of cinnamon with the dry ingredients might be a nice addition to the almond butter substitution.

Hi blue star hilda! It's NOT impossible... not at all! Attempt a few things here and there, nothing too difficult, and you will surprise yourself I'm sure!! You can e-mail or post any q's you have! :)
