A Better Peanut 'Better' Cookie!

I have posted about my Peanut Better Cookies from Vive once before, so posting about them today may not be anything new or exciting to you.

But, you see, I had to post this pic today because it isn't mine. Dragonslayer e-mailed to tell me that she made these cookies and really enjoyed them, and posted a pic on her blog. When I checked her post, I thought "wow, that's a far better photo than I took!!"

So, to Dragonslayer, you have a Better Peanut 'Better' Cookie than I! :)

Oh, you are completely welcome, dragonslayer... my thanks to you for posting them on your blog - and I'm so pleased that you love them!!

Well, now you must go make them, sdgvegan - you can blame dragonslayer for the sweet temptation (okay, I'll take partial blame)! :)

Leslie, if I lived close to you, believe me you would get some! In fact, since hubby calls me "the cookie lady" (always walking out of the house with cookies to give away), and since you are still not friends with your oven, you'd be getting more baked cookies than you'd want! :)

Right now I am eating Mango Ice Cream from TEV (on a stick) and it's sooo good.

Ok, Leslie... you have me intrigued! Did you first make the mango ice-cream and them put in popsicle molds? Did that work out fairly well?? I made the banana ice-cream a couple of nights ago for our older daughter - and she just LOVED it! So naturally sweet, and it's like a soft-serve for them!

Dreena, I'll most likely post about them tomorrow, as I am glad I snagged a photo before 2/4 were gone!

Yes, first I made the ice cream (while trying not to eat too much raw mango!) and it froze really well, not too firm and for sure not runny. I just spooned some into pre-made molds for popcycles, except I put my own sticks in and didn't use the tops, just molds. I checked them the next day and ran them under hot water and they popped right out and were great treats! So easy! And now I still have what didn't fit in the molds in a small container to dip my bent spoons into! No bending here though, this ice cream is like a mix between sorbet and gelato (double yum!).

Savannah, if you like pb cookies at all you will love these!! They are definitely more of a sweet cookie than the oat bundles, just so you know. :)

Leslie, thanks for giving me this detail. I don't know why I hadn't thought of making the banana ice-cream, blueberry ice-cream, and the mango banana ice-cream into popsicles before for my daughter???!!! I like the ice-cream when I first make it, because it is so soft, but we don't always eat it all, and esp for the kids, they only want a little at a time. I will definitely be making this into popsicles now... thank you!!!

I came over by way of Maddy and love your site (and I am not even a vegan). But I do like healthy food and looking for interesting alternatives for my kids. Now I want to go out and buy your cookbook!

Hi Cathy... thanks for popping by, and for that nice comment. :) Funny you say that, because many times when I meet people at vegetarian and healthy food expos, they often tell me that they aren't vegan - sometimes not even vegetarian, but they are interested in my recipes for the same reason. Healthy foods/snacks for their families. Sometimes they have a family member that has had an illness and they are changing their diets, or other times it's just cleaning house and getting the junk out and good stuff in, or because of food allergies (dairy/wheat, etc). I think because my recipes use a lot of whole foods and not much refined products, that they appeal to non-vegans. Anyhow, I have rambled on (I am known to do that!!), if you have a chance to look through my books, you can always jot down a couple of recipe names that intrigue you, and then come back to search them on my blog. That way you can see if the recipe looks like something you want to try out! Also, you can link on my recipe posting page to sample a couple of recipes there. :)

Oh, thanks Maria!! What a treat to hear such great feedback. Thanks for commenting, and I am so pleased to know that you love those pineapple bars. I love making that bark for the holidays. It's the only time I make it really, but when I do - watch out! Batches of it!! Btw, great guy of yours to order you a cookbook for your bday... I made these cookies yesterday and they are definitely the best peanut butter cookies I have ever tasted. I got Vive le Vegan just a few weeks ago and I love it.
