Hi Savanna, thanks for the mother's day wishes. :) Re the blackstrap molasses, you can use regular molasses if you have it. If you don't have that, you can omit it since it's such a small amount and not *crucial* to the recipe. It gives a depth of flavor that I like in the cookies, but if you make them without it, they will still taste fabulous and the recipe won't suffer one bit! Enjoy!!!

Dreena, I have a question for you...when your daughter is invited to b-day parties do you call ahead and speak to the parent regarding her "dietary restrictions"?

Hi sweet pea, well, I don't have any situations (yet) where my daughter is invited to parties and I have to notify them of our diet. So far, most of the parties we have been to the moms/dads are also friends or acquaintances, and so they know our diet. Some of these friends are also vegetarian, and so they have served things like veg hot dogs, hummus, fruit, etc. I do remember one party two years ago that they served regular hot dogs and a lot of cheese dips, etc. The party was after lunch hour so we had our regular lunch and by the time my daughter was at the party she wasn't interested at all in the food, but just wanted to play. She had some fruit and a few chips, and that was it. She didn't even look at the hot dogs or other foods. I know I will have more of these situations when she is in school, and I suppose I will have to chat with the parents at that time. I will always offer to bring along a veg hot dog or something else for her. I find the kids are always more interested in the fun and games, and just nibble on fruit and maybe some chips anyhow. If they have some food in their bellies before reaching the party, it's not a problem usually. Plus, now she understands what her food is, where it comes from, and so she doesn't want to eat the cake with 'cow milk' or cookies with 'eggs'. I guess for every bday party she will be invited to I will be making my own batch of cupcakes at home! :)
