Breakfast Pie

Back to a new recipe! I'm going to feature more of my recipes from Vive and TEV in upcoming months, but I still have some exciting new yummies to show you as well.

Like this Banana Pecan Rice Pudding Pie for Eat, Drink and Be Vegan. Here it is before going into the oven (looks good already, huh?).

Below, I'm spooning a luscious bite after the pudding is out of the oven and has cooled for about 20-30 minutes. This pudding pie is made with wholesome brown rice, but you'd hardly know it with how creamy and rich-tasting it is. Not overly sweet or rich to enjoy for breakfast, but just enough to make it more of a breakfast treat than your ordinary morning meal.



On to serving... How else, but drizzled with vanilla non-dairy milk... in these most elegant - very fancy shmancy Dora The Explorer and Sponge Bob bowls! Yeah, I could teach Martha a few things.

Wow…that looks like a great brekkie! I like rice pudding for breakfast every now and then so I definitely would love to try this!! I need to get myself some Dora and Sponge Bob bowls before the book comes out so that I can serve this in the proper manner! :)

Something about bananas must be going around the vegan blogsphere (I was just eying Susan's banana pudding over at FatFree Vegan). HHHHmmmm I guess I better jump on the bandwagon and make myself some decadent banana goodness. I can't wait to try this recipe out- I've never had rice pudding or any sweet rice dish before. Too bad I don't have any Dora-ware to eat it in.

Teresa, I just checked out that pudding - wow, it looked terrific. Funny, I just picked up some of those alphabet cookies on Susan's blog for our girls this week too. You MUST try rice pudding some time. It can be a nice dessert - but sometimes too filling/heavy for dessert, but wonderful as a snack or breakfast!

Veg-A-Nut... wait! We must get ourselves a Winnie bowl!! We often get these bowls and cups/spoons from grandparents. We'll have to drop a hint for Winnie, Tigger, or Piglet next time!

Urban Vegan, agave nectar is totally justified on this pudding... as is maple syrup... or a dollop of cream... or extra nuts. I can't wait for you to indulge too!

Oh yum...my mouth is watering.

My mom used to make honey-sweetened tofu pie for breakfast when I was little -- there's nothing like dessert first thing in the morning!

Hey Susan! I guess we're in a banana frame of mine... you really must start using these elegant Dora serving dishes for your photos, though ;-) Though, I bet your food pics would look stunning even in these bowls!

Hi bbelf, wow, that's very cool that your mom made tofu pie for you! I'm guessing you're fairly young - or your mom was very enlightened... or both!
