Remember this Warm Potato Spinach Salad with Pine Nut Dressing?
If you have ed&bv and haven't made it yet - get to it! It's delicious and can almost be a meal on its own (throw in a handful of white beans and make it even more of a meal). Whatever, it is sensational, and since I've just posted the recipe, you can all make it! Get to scrubbing those taters!
I've also posted my Quinoa Spring Salad from Vive. This has been a popular salad for many folks I know, and so I wanted to share it with you for your summer bbq's and picnics.

I am lucky enough to have all of your books but I love when you highlight recipes on your blog-it always inspires me to try a recipe that may already have a coloured post-it but that hasn't yet been created in my kitchen.

MMmmm Dreena, in our household that potato salad is one of our favourite things to have in the fridge. I still have to try that quinoa salad though!

The quinoa salad is gorgeous. Since I have a nasty allergy to quinoa I'm going to try it with Jerusalem couscous. The couscous has been sitting in my cupboard for a while so it's about time that I used it.
Thanks Vivacious, though really I should have had many of these recipes posted some time ago. It takes some time to reformat them from the final adobe versions, and my time is always ((squeezed)) as a mom and doing new recipes, etc. Anyhow, I hope to balance out the offering of recipes, and have many more for folks to choose from. It's really good to see you around here again, btw. :)
Veganlisa, glad to give you some extra 'push' to try a recipe! I'd love to go to the TO food fair. Maybe I'll look into it. It's right around when school starts up again, so that's tricky with the kiddos!
Judy, if you generally like quinoa, then definitely give it a try - esp with the tangy/sour vinaigrette - really punches it up.

Vegnextdoor, as you know, potatoes are in the top 10 foods in this house - more for hubby and the kids than for me, but I do love that salad too. Plus, I prefer new potatoes, or red/yellow spuds - just a better flavor/texture to me than russets - so this salad naturally works for me too. Hope your spring has been going well... it's been a chilly one here!

You rock! I am finally getting around to trying a bunch of recipes from vive, I got ed&bv and made everything in it right off the bat, but I didn't do much with vive right away. This week I have made Totally nutty bars, and oat bars from vive, and several main courses. Oh, and I finally got around to make the cashew banana ice cream, my daughter loved it(in between cries of "Brain freeze!"). Thanks for consistently pleasing with delicious, healthy recipes-- and thanks for all the soy & wheat free choices!!

Yum! The potato salad is wonderful, Dreena! And, fortunately, my family wouldn't touch it, so I had leftovers for lunch all week :) This was the first recipe of yours that I've made, and I'm definitely looking forward to making more!
