Oh Geez... PleeEZ!

First, I'm honored and delighted to be named one of the best blogs in the first annual VegNews VegBloggy Awards. (in case you didn't notice the colorful banner above) Thanks VegNews, and thanks to all of you as well that visit and enjoy my blog. Exciting news! :)

You asked for it. Alright, begged for it.

So, here is the (never before published) recipe for Mac-Oh, Geez! For those of you new to my blog, see this post from January.

We love this recipe in our house. It pleases the adults and kiddos alike, and busy folks like us moms can benefit from prep work ahead of time - blend the sauce in advance, then get the pasta prepared close to dinner hour and throw it all together.

After all that pleading, I want you guys to go make this now, okay? And, let me know what you think, please! (now it's my turn to beg) :)

Since I am not sure of all of my 4 yr olds allergies could we subsitute the cashews and brazil nuts for almonds? I know he is allergic to peanuts. So far he has been able to have macadamia nut butter and almonds/almond butter.

You're welcome, guys... hope you love the recipe as much as we do!

Robin, if you are able to have mac nuts, I'd suggest you sub mac nuts for the cashews, and then almonds for the brazil nuts (since the mac nuts are 'creamier' like the cashews, and the almonds are 'drier' like the brazil nuts). I haven't tried it with this substitution, but I have a hunch it will work nicely. Let me know if you give it a whirl!

Thanks Billy, and a big congrats back to you! :) No, I won't be at the party... I'd LOVE to, but it's a big trip to take from Vancouver, esp on short notice. Have a fun time!!

Oh, BTW, I made Orange Sesame Tofu from ED&BV last night and it was so delicious, I think I'm going to make it again tomorrow. :o) (I'm serious!)

Dreena, I love your Mac-Oh-Geez1 I made it today for lunch. My husband doesn't like creamy sauces so there is lots left for me. I didn't bake with the topping, but it was great just as a regular pasta dish. I threw in some organic peas for a little green. Thanks for the recipe and congrats!

i like the pasta and the sauce, didn't love the bread crumbs.. i felt there was too much of them (i should have just used half). i also added a tsp or so of dried parsley to the breadcrumbs, and a bit more salt to the sauce. ellia, kurt and i ate lots of it, kaeden picked at it (alas, my non-picky kids days are over!). i'll def. make again

michelle s, glad you enjoyed it! Not often you hear that someone doesn't like creamy pasta sauces, etc... but, certainly makes it easier to omit cheese/dairy from your diet! Most of us have the hardest time with that having enjoyed creamy sauces, puddings, ice creams, etc in our pre-vegan days. Then again, there are SO many options now being vegan, recipes and products included, that there are options for just about everything! When I first became vegan there were almost *no* options - for ice cream, cheeses, sauces, etc. I'm rambling. I'll stop now. :)

Michelle, funny you mention that about the crumbs, b/c I too like just a lil bit of crumbs on my pasta - whereas hubby loves lots of the breadcrumb topping. When I make it, I portion part of the casserole with no crumbs, and then add extra to a portion for him! I like having some without any crumbs and with just a sprinkling (then there's more sauce to taste)! Initially, I called for 1 cup of breadcrumbs for the recipe, so I've made some notes to adjust for the breadcrumbs. Also, for convenience, I use "Ian's" w/w breadcrumbs. They are very dry, so stay quite crunchy for texture. Thanks for the feedback, I've made some notes in my recipe to give folks a heads-up.

Haven't made your recipe yet but looking forward to it. Love creamy sauces and I love to try recipes such as yours that resemble mac and cheese. Love comfort food. Now I'm wishing for a rainy day. :-)

I made this recipe for dinner last night and it was delicious! I was pleasantly suprised that I didn't taste any strong nutty flavour. This recipe is a keeper for sure :)
