Recipe Post: Super-Charge Me! Cookies

One of the best things about blogging and communicating with you through e-mail is that I get feedback of which recipes emerge as favorites that are regularly made in your own kitchen.

My Super-Charge Me! Cookies from ed&bv has become one of these faves, and so I am posting the recipe today so that even more of you can try and enjoy these nutrition-packed, delicious cookies! Go get the recipe... and get baking. Now!! :)

mmmm! These are one of our favorites and just "healthy" enough that I don't feel guilty eating a couple every day.

I have made these multiple times from my now very beat up copy of EDBV. They are AMAZING and I have to freeze them in individual baggies (with 2 or 3 cookies in each) to keep from eating the entire batch at once (because I WILL try to convince myself that they are healthy enough to do so!)

hey! this is one of the first cookie recipes i de-glutened. i used GF quick oats, 2/3 cup of GF cookie mix (below) and 1/2 tsp xantham gum (or guar gum). worked great!

GF cookie mix = 4 cups brown rice flour (superfine if you can find it), 1 1/3 cups potato starch (NOT potato flour) and 2/3 cup tapioca flour/starch
*mix really well and store in a cool dry place.

Thanks for the food processor info.! I will have to make a decision soon, funny how often that little gadget is used!
Ah- I MUST make these cookies! Hopefully I'll hve a free night sooner or later to get into a baking rut, haha... I have ED&BV so I don't even need to waste paper or ink printing the recipe, hehe :-)

Oooooh, these cookies look delicious! We love (and devour) your Homestyle Chocolate Chip Cookies and this afternoon I made your "You Got Chocolate in my Peanut Butter" Cookies (delicious and kids loved them as after school sweet-snack). Next time, we'll get super-charged!

Oh, and thanks for the hemp seed temptation. I just found the seeds yesterday. They're wonderful. My husband was eating them straight from the bag this morning.

Michelle, I really appreciate you sharing your gluten-free modification for everyone - I'll have to try it out too!!

motherhoodtales, that's a pretty great response on the hemp seeds - esp from your hubby! They are different than other seeds and nuts, so sometimes they take a lil' getting used to... not in your household though! That's fabulous.

Urban Vegan, I'd love to, believe me I would. Gotta have this baby first, and then get life back in order... kind of back in order... whatever that is for us now with the kidlets - ha! I'm guessing your cookbook is out soon? I'm trying to recall - think it's out in fall '09?? Will have to check on your blog again about that - can't wait to see it & I'm sure you're very excited!
