I made these for my flatmates in Scotland, all of whom were very nonvegan (!) and they loved them!
I can happily say I've made these more than once and loved them every time. I let a friend (non-vegan) look through the book and she wrote down a few recipes and called me back saying "those Carob Cashew cookies are so Freaking GOOD!" It was great, especially since I think she ended up buying the book.

I love homemade ice cream sandwiches. These look perfect for a hot summer day.
BTW, I made your sweet and sour tempeh (ED & BV) recently, and my taste buds were in heaven!!
