Recipe Post: Coconut Raspberry Squares

I posted about these Coconut Raspberry Squares before, and I thought I'd share the recipe with you today.

I have heard from several people about how they have really enjoyed the Pineapple Lemon Bars from Vive. (Perhaps after Jennifershmoo posted about them, it peaked some interest for others to try them??) Who knows, but thanks to Jennifer anyway! :)

Anyhow, I thought that since some of you have been enjoying those Pineapple Lemon Bars that you would probably also like these Coconut Raspberry Squares... and if you don't have a copy of TEV, then the recipe is posted for you to print off and enjoy!

Cooking Notes: These squares are even easier to make than the Pineapple Lemon Bars, since the filling requires no prep! You can assemble them in just minutes, and then they bake for about 1/2 hour. They can also be made wheat-free using spelt or barley flour, instead of wheat flour as listed in the original recipe. You can check out some cooking tips in my original post.

I'm DEFINITELY making these! I just made the Ooey Gooey Caramel Bars (from TEV, I think) and LOVE them OMG love them, but these look like a better bar to take when I go visit my brother and sister-in-law (less gooey and more transportable). Looks like I'll be making a quick trip to the grocery store today to get some raspberry jam. :)

i was just thinking of some more recipe ideas for your new cookbook. first, 2 hummus ideas (LOVE your creamy hummus!).. Roasted Garlic Hummus and Spicy Hummus (we've been getting a spicy hummus from the store, it has puree'd roasted red peppers and puree'd jalapenos in it. i know you have your chipotle-yam hummus which is nice and smoky, but this other hummus is spicy! so nice with cool veggies from the fridge).

yummmm, hummus. is there any other so perfect vegan food?

I just made and blogged about the pineapple lemon bars too - they are so yummy, especially after being in the fridge! My only complaint was that it took a long time to yield a tiny amount (for us!) so next time I make them I'm tripling the recipe and freezing some. ;)

MMMMMmmmmm yummy! The pineapple bars were a hit at our house as well. They smelled delicious while baking in the oven.

Thanks for posting the recipe. A less labour intensive version (from the pineapple ones) would definitely be welcome.

Oooey Gooey Caramel Bars????? OMG! I have to get TEV. I love caramel.

Not sure if I'll get to baking those bars in the next little while, still hot and humid here and we don't have central air.

Those pineapple lemon bars are the best. I would definitely put them in the top 10 list of things that could turn the world vegan. I'll make these raspberry bars for an upcoming picnic, thanks!

I have made these Coconut Raspberry Squares many times since getting the cookbook, they are just so good. Over the week-end I also made the Peanut Better Cookies. They are now my new favorite vegan peanut butter cookie. Pineapple Lemon bars will be next on my agenda!

Yes, these are very "transportable" Stephanie - oh, and they freeze fabulously!! Those ooey gooey ones are gooey good, though... glad you have enjoyed them. :)

Hey Michelle! You are on my wavelength I think!! I have three new hummus/bean dips already finished for the book, with another almost done. I have plans for a roasted garlic dip in addition to these, though probably with white beans or another bean other than chickpeas. Thanks for the suggestions! Oh, btw, that scraped out dish from the seed bars was priceless!!

Hey new mommy Miriam!! I saw that post, and I have to tell you, I have great admiration for the fact that you even attempted those bars with such a young babe... "I'm not worthy, I'm not worthy"!! Yes, double batch it for sure next time. :)

Thanks dragonslayer! Yes, these are super-easy. Just a layer of the coconut/flour mixture, spread on the jam, and sprinkle on the topping, presto, work is done! Hope you like 'em. :)

Hey Madelyn!! You have always loved those squares, I remember you saying so way back. I'll be making the choc cake for father's day I think - definitely hubby's favorite, and then I get to pick more of the icing off of his slices. :)

I was actually looking at the TEV recipe the other day. It does look really good.

The Pineapple Lemon Bars was one of the 1sts recipes we tried from VLV. Unbelievably good!

Dreena, I made the nut bars again from Vive and you were so right about the barley malt. It made a HUGE difference. All the ingredients stuck together and they were delicious.
I also used the orange mango smoothie recipe to make popsicles.

I keep Vive in the kitchen at all times b/c the recipes are easy to make and nutritious. I can't say that about any other cookbook.

Sweet pea, you are lovely to say that.

It means a lot, because I sometimes struggle with "should I's" when making recipes - not wanting to add too much sugar, refined stuff, oil, processed ingredients, etc. I want the food to taste good but also be healthy (for most things, anyhow, cookies/cakes usually an exception and I add in the extra sugar and oil)! So... thank you.

I made these bars for dessert yesterday--there are only two of us and there are now only 2 bars left! My boyfriend asked me if he could have seconds...I said yes, and he came back with two bars, both for himself! LoL

Just thought I'd pop in to say that I made these as a gift for my brother and sister-in-law-- we stayed with them on a trip this past weekend-- and they LOVED them-- there were only one or two left at the end of the weekend! :)
