Yes, More Cupcakes

Ok, so I mentioned on Friday that I had to make a second batch of 'standard' cupcakes for my daughter's party (yeah, yeah, yeah - for me)!

These are my new Vanilla Cupcakes with my Creamy Vanilla Frosting. This frosting is definitely "my thing". I was scraping out the leftovers with a spoon. But that's because it's not sickly sweet. Just rich and creamy and delicious!

I think I will need to keep retesting this one - hee!

In fact, my daughter had a party day at her preschool last week and so I made another batch of these. Since it was her birthday last month, they did a birthday cupcake for her during the class... and so of course I brought my own egg-free/dairy-free cupcake. Lucky for me I guess that I just had to make her a cupcake for preschool!

I'll try to get off the sweets for tomorrow's post! :)

Nothing wrong with sweets! That's my kind of icing! Did you use white flour for those cupcakes or something else? They look so delicious!

Since I don't have kids...other than my furry ones...I don't know the answer to this question...so maybe you could help me...

Do you let the teacher(s)/Students(s) know the food you bring in are vegan? Go just let them enjoy without mentioning? If you tell them...what are the reactions? jw

Hi Melissa, yes, I used the dreaded white flour - I know, slap my wrists! As I've mentioned from time to time, though, I often use white flour for cakes and cupcakes - special occasion stuff. But I am going to try testing these with w/w pastry - just to see how different they are!

Hi Harmonia! Well, in this case I just had to bring in the one cupcake for my daughter. The teachers know our diet, and I think some of the other parents know (I'm the freaky vegan mom - ha!). But last year, for instance, we had a different routine and the parents brought treats for all the kids. So I made my oatmeal raisin cookies and they were handed out, and I made no mention of it. All the kids ate them and enjoyed them. I just told the teacher that there was no dairy/eggs in there in case of allergies. But noone was allergic anyhow (to my knowledge). The typical reaction to finding out we are vegan is the 'taken aback look of shock' for a moment, then one of a couple of comments, usually "oh, uh that's pretty strict isn't it?", or "oh, where do you get your protein?". Occasionally I will get an interested response and people ask questions or would really like to know how to eat healthier, but most often it is the puzzled/kind of shocked response, but I'm well used to that now!

Wow! Those look soooo yummy! My family always seems to want chocolate cake for birthdays. Not that there is anything wrong with chocolate....all things are right with it as far as I'm concerned, but I'm the one that always wants something different. I really, really like vanilla cake. The icing on those looks so decadent, I'd be scraping the bowl too.

Thanks Carrie! I know, I can always 'default' to chocolate... but sometimes having a cake or sweet with a fruity tone or great vanilla essence is so delightful! I have heard that vanilla ice-cream is the #1 flavor sold in the US, so there are many more vanilla lovers out there!

Thanks, Tara! Truth be known, I often slice off the top half to eat the "tops" with the frosting, and give the bottom-half to my husband... I've always loved the frostings more than cakes!
