After yesterday's comments, were you guys wondering about these Cupcake Cones?
Aren't these adorable??! The idea came from Julie Hasson. If anyone knows cupcakes, it's Julie! She is the author of 125 Best Cupcake Recipes (as well as two cookbooks on chocolate). So, I asked Julie if I could 'veganize' her idea for my next cookbook, and she graciously agreed!
What fascinates me with these cupcakes is that you bake the batter in the cone, and the cone does not burn... or even really brown! Very cool!! I used a basic vanilla batter, and then topped it with my new Kids' Frosting recipe. This frosting is buttery and sugary, and again tinted pink with beet powder (I don't DARE tell my daughter that)! I should have topped them with some of those sprinkelz I had leftover, but I forgot!
I also made another batch of standard cupcakes (in liners) for the party - for the adults. Wait now, who am I kidding?... for me!! You see, I know kids love this sugary icing, but I do not dig it much. Sure, a little taste is fine. But to top a whole cupcake, I want a creamy frosting that is smooth and rich but not super sugary. I will post a photo next week of this other batch of cupcakes. I loved them, and couldn't keep from picking at them all week long! Then yesterday, I made another batch to bring one along to my daughter's preschool 'party day' so she doesn't eat the egg/dairy one they provide. So, again, more for me to dip into all weekend!!
I think I will do two versions of these cupcakes for my cookbook, since the kids loved them and they are just so fun! Thanks again, Julie! :)

Yes, Kai, you can use just regular ol' cones. I have used the organic brand too, but any standard cone works fine (so far I've found, anyhow)! Thanks, btw, you're sweet!

Regarding the sprinkles that you used for your daughter's pretty cookies, I saw some at our health food store the other day. There was no price on the box or the shelf so that must explain the dust that was collecting on the fun-looking box.
Do you know of a good recipe for dinner rolls or kaisers that uses flour other than all-purpose? The idea of kneading bread scares me but I'm willing to give it a try. Now that I've baked cookies and scones I can bake ANYTHING! :-)
My mom used to do something like this when we were little, except with pudding or applesauce and sprinkles. Honestly, I bet you could put anything in an ice cream cone and kids would gobble it down!
Oh, and sweet pea, I have a wonderful recipe for 100% whole grain bread (a combination of whole wheat bread flour and oats,) that is a little time consuming, but it's not terribly dense, and pretty fabulous! Let me know if you want me to pass it along.

Cute idea! I'd like to investigate what makes the cone not burn. Hmph.

Hi sweet pea... well, that's funny about the sprinkles - I guess they were priced just a *little* too high at your store!! You know, I don't bake bread from scratch (that's more work than I want to take on right now!!), but I'm sure there you can sub spelt or w/w flour in most recipes quite easily. Good luck, and if I come across anything specifically, I'll let you know!
Oh, just noticed Catherine's comments - thanks for helping with that, Catherine!! Also, I love the idea of your mom filling ice cream cones with pudding or applesauce and then decorating them. What a sweet memory! Hmmm, your idea of putting 'anything' in the cones and kids will eat them - I think that's true... should I try salad or kale? Ha!
Sweet pea, I'd love to hear what you think of the Ayurveda book - so much of it just fascinates and intrigues me, and really does reflect people in my family based on their 'doshas'. It's really amazing I think!

Hi Susan, thanks! (though I can't really take credit for the idea!!) So far with my testing, I have found that you only need about 2 tbsp of batter in the cones (at least that's with the batter recipe I have been using). It doesn't seem like much, but I guess because the cone is so narrow, that the batter only has 'up' to go, and so too much in there ends up overflowing. Good luck if you try them out! :)

Yeah, that's kinda freaky Dreena, looking the same. Anyway, I found those sprinkles you were talking about at our co-op for $1.99 USD. I don't know if that's good or bad but you thought yours were expensive, so here's one comparison. Also, did you get my email? Hi Leslie, that's definitely cheaper than I paid for mine. About 3.50 Cdn is what I paid - yours would have been about $2.25 Cdn, which is MUCH better, but still a bit pricey for how much you actually get in that box - two little bitty packages! Hi Julie!! Well, I'm glad the 'master' cupcake maker gives the thumbs up on these!! :) Next time I am going to decorate them a little more - to look like a real soft serve I think. Anyhow, I got the beet powder at a health food store. If you can get it bulk, that might be best. I got a rather big amount that was already packaged (maybe 2 cups or so), and it wasn't that expensive, but I don't know WHEN I'll use it all up! You really just need to buy a tbsp or two at a time, because you use just a few pinches to tint what you are making. Anyhow, thanks for your comment on these, and more importantly, thanks for the idea! :)
