Recipe Post: Roasted Tomato Bean Stew


I know, I'm supposed to be getting things ready for the photo shoot!

But, I wanted to leave you with a recipe to get you through the next few days. It's cold out (for most of us), and looking through my Recipe Pages, I realized it was time to share another recipe, and especially something hearty and satisfying for these chilly days.

So, I give you Roasted Tomato Bean Stew from Vive. I posted about it once before here. I really love this stew, and I encourage you to please, please use the Muir Glen Fire Roasted Tomatoes in this stew as listed in the ingredients. You don't have to use them, and I give a suggestion to enhance the flavor using regular canned tomatoes , but the stew is much tastier with these roasted suckers! This soup is brimming with whole food goodness - beans, brown rice, and wild rice, and vegetables - and has magnificent flavor to boot!

...and isn't this just pretty and colorful with Valentine's Day approaching? (and with such a healthy meal you've got plenty of leverage for a chocolatey dessert. Ah, yes, the chocolate mind is always at work here.)

Eat up, and enjoy! I'm getting back to work now. Really.

Oooo I've made myself notes to make this but haven't. Why? I do not know. I'm sorry it's fallen between my memory cracks! And it uses my faaaaavorite Muir Glen Fire Roasties - does it get any better than that?
Here's hoping for a bit more 'soup' weather in Portland.

I have to try that one! Yesterday I made the celebrity adzuki bean and rice patties... they were awesome! Maybe as good as the morrocan chickpea patties!

thanks so much for the new recipes dreena! i've got the ingredients to try both. and, loooooved your choc chip cookies btw. i did a little bake-off comparison with "how it all vegan" choc chip recipe. theirs isn't bad, but your recipe wins easily! next time will have to double the recipe, or maybe triple ... ;-)

Oh all right. If you insist then I guess I'll HAVE a to use the roasted tomatoes. HAHA! You remember my obsession. I just found that recipe in the book & OMG!! How have I not made this? As I type, we're getting the beginnings of a snow storm and nothing would be better than this meal.

I got your cookbook from my son and his girlfriend for Christmas, and the Roasted Tomato Bean Stew was the first thing I tried. It was fabulous and very hearty. Even my picky husband and my pregnant daughter loved it.
I bought regular canned tomatoes at the grocery store, but since I am a stickler for details, before I made your stew, I checked my local co-op and found the Muir Glen Fire Roasted tomatoes and adzuki beans. After reading your post, I'm glad I persisted and found them.
Last weekend I made the Creamy Hummus (delicious!!!!!) and the Creamy Raspberry Oatmeal (nice and warm and tasty on a cold morning in MN)!
Thoroughly enjoying and appreciating your cookbook :)

I really need to try this soup! Hey Dreena, I finally made your cornmeal-coated polenta fries from your article in VegNews (#52). YUMMY -- it's the new snacking sensation @ our house! So addicting. I have a photo up now -- but I'm sure you already know what it looks like! LOL! :o)

I definately have to make this soup! (Although I'm afraid I won't find fire roasted tomatoes here...)

The spring rolls from Vive are in the oven right now. The filling tasted really good, so I can't wait...

Pre-vegan I loved 'fancy' ice-creams (like Ben&Jerry's, Haagen Dasz, etc). In the Netherlands you can't by Soy Delicious or something like that (I can only find vanilla and chocolate icecream) and I really missed having my occasional bowl of icecream... So yesterday, I decided to make my own! I made cookie dough with the recipe for Homestyle Chocolate Chip Cookies (they are delicious by the way), I made the Easy Caramel Sauce, mixed it all up wih a tub of vanilla (soy) icecream and put it in the freezer... And it was sooo good! Yay!

This weekend I tried to make the p-nut butter and chocolate granola bars from Vive. And they turned out a goopy chocolate mess. The melted carob chips on top did not harden at all (even after freezing) - which I assumed they should. It tasted okay, but it was so drippy you had to practically eat it with a spoon. Any ideas? Is it because I used carob and not a grain-sweetened chip? They sounded so good I want to try again!

Michelle d, I'm glad you loved those celebrith adzuki bean pattie - I've been wanting to blog about them for so long, but am too immersed in my new recipes.

Arine, you clever, clever girl! That sounds wonderfully decadent and probably better than the commercial pints out there - you can put all the morsels and chunks and sauces in there as you want - I'd load it up myself!

Hi Lucy, carob is the culprit here. Although carob and chocolate chips seem quite similar in chip form, when you melt them and combine with milks, etc, they do not solidify the same. I recommend using chocolate for the topping, and if for some reason you aren't able to eat chocolate, then use quite a bit less milk with the carob chips - maybe just 3 tbsp and see how that sets up. Hopefully it was just the topping that went goopy and the rest was okay. Also, if you use soy milk, you may have better results than using something like rice milk - it's just a bit thicker. Let me know how it turns out if you try them again. Good luck!! :)
