I've always loved my sauces. Sauces and dips and anything that is full of flavor. Many years ago, when I would order "Fettucine Alfredo", I'd ask for extra sauce... the noodles weren't pleasing enough, had to have lotsa' sauce!
Now, I can ladle on as much sauce as I want with this new "Fit-tucine Alfredo" sauce. I'm creating two versions, one using (some) soy, and the other soy-free. And while this isn't altogether 'low-fat', it IS of course no-saturated fat, and no-cholesterol.
When I've served it recently, I've topped it with my "Tamari Roasted Chickpeas" from ed&bv, and that has been spectacular! I have another topping planned for the 'fit-tucine', but haven't finalized it quite yet. I think I have the soy version of this fit-tucine nailed down, so I hope to finish the soy-free version soon and share them with you.
Here, I also served it with whole-grain rotini noodles instead of fettucine (cause I'm not a stickler for pasta rules), along with salad (not pictured) and broiled asparagus. This is my fave way to eat asparagus (apart from grilling), and it can be prepared just like the "Lemon-Broiled Green Beans" in ed&bv (see sidebar in the recipe).
You're gonna be ladling on extras of this sauce too... as our daughter said, giggling, during supper "whoa, mom, you really do love sauce"!

DREEENA! You are seriously the MAESTRO (or maestra?) of Culinary Music! VEGAN OR NOT! I'm not a Vegan and your recipes taste better than all the other omni's out there! I find myself cooking with Vegan-friendly ingredients all of the time now! And I LOVE it :)

whoa,that sauce looks sooo creamy-MMM! i love the idea of topping the pasta with the tamari chickpeas too.
a LOW-FAT fettuccine??? WOW! The sauce looks super creamy! And I never thought of topping pasta with Tamari Roasted Chickpeas, but now that you mention it, they would go well with almost any type of pasta dish

More than a few times your posts have sent me on trips to the kitchen to fill a mighty need for something tasty. Although, whatever I whip up usually falls short of the tasty creations in your pictures!

That looks very good. I'm also into lots of sauce, and though I don't remember ever having that particular sauce, it is now on my list of foods to try.

I like alfredo sauce well enough, but I can never have the regular dish as an entree. It's just TOO much. I'd be willing to try your version though, because I know it won't be all heavy with cream & cheese. When might we get to see this recipe?

animalfriendly... sorry, it's not low-fat - it's certainly full of healthy fats, but I don't think it will qualify as 'low-fat' - maybe if you don't use too much sauce - but that's not my taste obviously!!
anonymous, I have to finalize the soy-free version (and probably do one more run-through on the soy version). I haven't had much time for testing this last month - it's been really too busy for me to focus on testing and I'm really out of my normal cooking/testing routine. So, I can't say exactly when, but I'll try for soon!
Carrie, yeah, I get what you mean about regular alfredo sauce being too much - I don't think you'll have that same sense with this sauce, but then, not *everyone* likes sauce as much as I do!! :) (and hopefully soon with the recipe, as I mentioned above)

Oh.My.God. Alfredo has loooooong been my favorite sauce, I've tried all kinds of versions to make it leaner, and now, since I'm coming off a juice fast - dairy free. I am so looking forward to trying this - it looks amazing, like all of your other recipes (the chocolate cake is first on the list though). I've just discovered you and you've created so many things I want to try!
