Black and Blue Pancakes

It's Sunday, and as many of you know, that's Pancake Day in our house.

This one is a simple recipe to throw together, and that's a very (very) good thing... because these new Black and Blue Pancakes are a bit of a guilty pleasure.

Well, they're healthy enough, made with whole-grain spelt flour, blueberries, very little oil, and also including non-dairy milk
(I like Living Harvest hemp milk)...

but then, we add the chocolate chips! Like having bites of dessert for breakfast - YES!

There's something incredibly satisfying and sublime to me about the combination of chocolate and blueberries in baked goods. I think they were meant to be together. Kind of like black and blue in a bruise, but in a way that's good. You know what I mean. Chocolate and blueberries should be together more often... make it so in your kitchen!

MMM....these look great. Working with whole grain is tricky with pancakes, but spelt works amazingly well.

I seriously can't wait for this recipe. The pancakes are so thick and fluffy! I frequently pair chocolate and blueberries because they are such a perfect combo...maybe even better tha chocolate and strawberries.

Oh yum! I LOVE blueberry pancakes, but have actually never tried adding the chips...mmmm, what a tantalizing post! :)

yum! i thought chocolate and blueberry were an iffy combination, until i tried the fudgy wudgy blueberry brownies from veganomicon, and now i know that they're decidedly not. can't wait to try these! also i just bought my first carton of hempmilk (that exact one actually...and i'm so excited to try it on my cereal, it seems that everyoneeeee loves it! you rock dreena

My first thought when I read the title was blackberries & blueberries. But as I read more, I was pleasantly surprised to see not blackberries, but chocolate! Yum, what a great idea :)

I totally agree about the blueberry/chocolate combo! I made the raspberry scones from ED&BV with chocolate and blueberries, and they were fantastic!

P.S. I made the peanut sesame hummus from ED&BV and it is fabulous! I can't wait 'till the birthdays come around so I can begin baking cookies and cakes! =D

I never eat breakfast but I love to see what other folks eat. These pancakes look fantastic!

I made a recipe from TEV tonight that I am totally in love with - the butternut squash puree from your recipe for Mexican Tortilla Triangles. I ate a ton of it!

Mmmm....we have plans to make waffles on V-day weekend...the first time we have used our waffle iron since we got married 5 years ago!! Also going to make some seitan sausages. This is totally non-related to pancakes and you may have already come up with your answer, but...

I've been mulling over cookbook ideas for you and just came up with this one: Joie de Vegan.

Joie de vivre is french for the joy of life (if I'm remembering my high school lessons correctly!) As a lot of vegan cooking/veganism is about life (giving and receiving), I thought it might be appropriate. =)

Shelby, I'm with you, I think they're a better (maybe more addictive) pairing as well!!

Eleanor, the Living Harvest brand is the only brand of hemp milk I like. The vanilla flavor is a touch sweeter than the original, but both are good. Hope you like it too!!

Katy, glad the scones were a hit - I have a hankering to make scones today too, but am also leaning towards cookies!!

Laci, we started the pancake day thing on Sunday b/c it was a slower-paced morn for us - now, it's become such a tradition that our girls know Sunday as "pancake day"... no escaping it now! :)

aTxVegn, that's super to hear... you know, I haven't made that puree in years now! But, I remember when I made it, I also just loved it, with the sweetness of the squash against the spicier seasonings - I also really loved topping it with caramelized onions when I had the time to do so. I might have to make that myself again sometime... thanks for the feedback!! :)

but yeah, the hempmilk i have is the vanilla one, and i was never one to complain about anything being too sweet... :)

I agree about the Living Harvest Hemp milk. It's very good. Especially like the unsweetened varieties.
I don't eat pancakes often but maybe if I made these, I would.

yeah and i just got my vpure omega 3 vitamin and sublingual b12 pills in the mail and starting taking them, so thanks so much for your advice on that dreena! i would say, i feel better already, but that would be ridiculous! haha

also, i think im gonna try out my hemp milk on some HEMP plus granola tmo! too much hemp? NEVER!
