Breakfast Cookies

Finally, I'm back with a food post! Before I begin, to all of you that left kind and congratulatory wishes on my last post, I thank you and appreciate your sentiments. Life is still a bit rocky day to day with baby adjustments, but it's time for a food update, so let's get going!

This is a new cookie recipe, and it's kinda' special - at least imo! Special because they are flour-less (no wheat, spelt, or barley flour) and are made without sugar (they do have brown rice syrup and maple syrup, but no unrefined sugar). (*Okay, I sometimes include a sprinkling of carob chips, but you may omit those if you so choose!) These cookies also have nut butter (or you can use a seed butter), ground salba, dried fruit, and coconut oil. With all these nutritionally superb ingredients, and because they aren't as sweet as dessert cookies, I've named these Breakfast Cookies.

And, really, these cookies can be part of a busy morn' breakfast. Why not, when you're eating so many healthful ingredients? Maybe start with a green smoothie, and after a couple of these cookies, you'll be powered up for the morning!

I love that our girls don't realize just how healthy these cookies are when they munch on one. For them, simply a cookie... for mom, a nutritional big-hitter disguised as a treat!

oh, and i never got to make the banana choc cake bc i was so busy helping w the organic dinner at my school that night, then finals season, and then a 3 wk trip to europe! but i'm home now, and i'm going to make it ASAP! thanks dreena :) it will just be a very very late veganversary party.

this morning I munched on some almond buttered toast along side my green smoothie- now I can enjoy something even better! :-)

yummie. i don't think i've ever had a cookie for breakfast. i love baking with coconut oil! new discovery, but i love it. what a great recipe.

congrats again!!! I just wanted to say (totally off-topic - well, not completely), that I absolutely love your salad dressings. I make the ones from ED&BV all the time, to rave reviews. They perk up any kind of salad I care to make. Also, I've made every single hummus from that book, too! I just love the Black Bean-Orange, and the olive one. Thanks for all your creative work!

I also had oatmeal cookies on the brain today. I made the Supercharge Cookies from ED&BV. I omitted the dried fruit. The cookies were yum-o! What a wonderful afternoon snack.
