Egg Nog Ice Cream Pie with Butter Rum Sauce (because what's egg nog without a lil' rum?) for Eat, Drink and Be Vegan.
Oh my! I DO scream... actually squeal with sweet delight!
Shamelessly simple to make, and just perfect for a holiday dessert, but really why wait for Christmas to eat it?!
The Butter Rum Sauce is not too boozy - just a couple of tablespoons of rum for flavor, and some (or perhaps all) of the alcohol burns off through cooking.
Two quick, cute stories to end my post:
While grocery shopping with our older daughter the weekend, she hovered around the refrigerated blocks of cheese. I heard her saying "poor cows, poor cows". I've never really explained to her how it hurts cows to drink milk and eat cheese, but she seems to have a natural sense knowing that animals are not food. Then, when putting her to bed last night and saying prayers she interrupted me with "and please make sure people do not eat animals".
If only we listened more to the wisdom of kids...
