At last I get to posting this recipe after my teaser last week (what can I say, Paula Deen threw all of us off)!
These sweets are truly a breeze to make, and are also truly healthy. They have no sugar, and offer a gluten-free option (if certified gluten-free oats are suitable for you). I created these after having visions of these lemon-laced bite-sized blondie-tasting sweets, but far healthier and even easier to make than a blondie square. The cashews deliver the buttery, blondie flavor and the oats help keep the mixture all together, for one easy, lemony-delicious bite!
The beauty of this recipe is its clean and simple ingredients. The lemon really shines through, and combined with vanilla seeds the taste is pure and lovely. Sometimes the simplest things taste best, and this is one of those times.

Chocolate Thrill Ice Cream & Flirty Apron
Before I begin, I extend my appreciation to those of you commenting on my last post with such warm and cheerful congratulations. It is touching to have so many well wishes and positive energy sent my way, and I thank you for sharing your kindness.
Now, on to some food business! When I posted the Vegveeta Dip, I did promise to also post the Chocolate Thrill Ice Cream. Here it is folks! Now, all of you in my sweet-toothed club also have a new recipe to dig into!
Here's a fun apron photo that I want to show you. I recently won a contest through the Foodie Blogroll. What a treat... and a surprise! I was able to pick my fave style from Flirty Apron (they have such cute styles, and some cheeky men's aprons - gotta' love "I turn grills on")! I chose this "Blue Chocolate" style, and absolutely adore it. It's fun and bright and cheerful... and yes, a little flirty. ;)

Recipe Palooza!
A review of my Sample Recipes revealed that I had far too many sweet treats posted and not enough savory dishes and entrees. (Yes, I love the treats, but really, we need real food recipes too!)
So, the recipe party begins...
After posting the Cashew Banana Ice Cream, I have since posted:

Sun-Dried Tomato Pesto with Toasted Almonds and Pine Nuts (from ed&bv)
Peanut Passion Sauce (from ed&bv)
Chickpea Ratatouille (from Vive)
Kalamata Walnut Tapenade (from Vive)
I will be posting more recipes in the next couple of days... including a couple of summer salads and a new, unpublished recipe. (hint: oh-geez)
So... get cooking... especially those of you that don't have my cookbooks. No excuses, right?! :)

ED&BV Recipe Posts
Hiya guys. Quick note to let you know that the recipes for Mellow Lentil 'Sniffle' Soup and Chipotle Lime Two-Bean Hummus have been posted.
I had almost finished posting the Raspberry Cornmeal Pancakes/Celestial Cream recipes, but my computer crashed shortly after. I'm using a replacement laptop for the meantime and don't have access to my recipe files until my computer is fixed. Once up running, I'll get to the other recipes for you. I'll also be posting the Cashew-Ginger Tofu recipe, because I think you must try it out!

Please share the recipe page link (http://viveleveganrecipes.blogspot.com/) on any discussion boards/forums you are part of. It's great for others to try out some ed&bv recipes to get a sense of what it's all about. The archives on this recipe page also has some samples from Vive and TEV. Note to self: Must organize them. (yeah, helps when the computer doesn't bum out on me!)
Also, a reminder to those of you in my area that I'll be doing a cookbook signing at Choices White Rock on Sat Nov 24th 1:30 - 3pm. Recipe samples will be there... not just me!
