Vegan Chocolate Cupcakes

Our weather was so beautiful this weekend... sunny and warm west coast livin'... ahhh! Tough to stay inside and bake... IF I wasn't making chocolate cupcakes!!

These Valentine's cupcakes are made from my Triple Layer Chocolate Cream Cake recipe in The Everyday Vegan. I usually make the whole cake (pictured below right), however I do give notes in the sidebar of the recipe for adapting the recipe to make cupcakes.

This cake is a true crowd pleaser, and not just the vegans or vegetarians (and really, how many of these do you know in a crowd?!) This weekend at a birthday party, one of the moms asked me "when are you going to make that cake again?... I don't even like cake, but I love that one!", and at a recent yoga class one of the gals said "can you bring that chocolate mousse cake sometime?"

What people love about this cake is that it is very moist with a deep cocoa flavor, and it's nestled between layers of a creamy chocolate frosting that's not that gritty sugary sweet icing they are used to. If they ask what's in the icing, they usually stop stunned for a minute when I reply "it's mostly chocolate blended with tofu", but they shake off that 'dirty' word and dig in again! Sometimes I say "yeah... imagine, icing that's also good protein!!" :)

Oh, I have to buy The Everyday Vegan! I made these cupcakes yesterday for my sweetie. They are the Heavenly Coconut Cupcakes from Vegan w/ a Vengeance.

These do look great. I am not much of a baker, but I can handle cupcakes. I love making this stuff, because as the "meat eaters" dives into the cakes I love to tell them that they are VEGAN!!

Patty, I agree! And this recipe is not difficult at all. I actually think vegan baking is less fussy (for most recipes, anyhow) than regular baking. I have found vegan baking fairly simple and enjoyable. I do a couple of recipes that are a touch more involved using agar powder, but other than that, it's not troublesome!

Anyhow, I hope you give this recipe a go. Another way I like to do this recipe - even easier in my opinion than the triple layered cake and cupcakes - is to pour the batter into two 8 x 12 baking dishes. The baking time is about the same, and then you simply layer the frosting over each pan cake. Then, you can cut it into squares for a party, or potluck, lunches, etc! Definitely the easiest version of the three!!

I agree, baking with eggs, cow's milk, and other nasty items (from animals) makes baking much less enjoyable. I like it the way we do it here!

I picked up Vive at the library last night. I did a quick flip-through last night when I got back and it looks really interesting. I can't wait to try a few recipes out and see if I want to buy it.

Whoops, Jess, I missed getting back to you yesterday! I piped on the hearts through a plastic bag with a tip cut on the bottom. I used a mixture that I need to tweak some more, but basically it was tofutti cream cheese pureed with some unrefined sugar, raspberry jam and a touch of raspberry syrup. My final mixture wasn't quite firm enough, so I need to retest it.
