After yesterday's comments, were you guys wondering about these Cupcake Cones?
Aren't these adorable??! The idea came from Julie Hasson. If anyone knows cupcakes, it's Julie! She is the author of 125 Best Cupcake Recipes (as well as two cookbooks on chocolate). So, I asked Julie if I could 'veganize' her idea for my next cookbook, and she graciously agreed!
What fascinates me with these cupcakes is that you bake the batter in the cone, and the cone does not burn... or even really brown! Very cool!! I used a basic vanilla batter, and then topped it with my new Kids' Frosting recipe. This frosting is buttery and sugary, and again tinted pink with beet powder (I don't DARE tell my daughter that)! I should have topped them with some of those sprinkelz I had leftover, but I forgot!
I also made another batch of standard cupcakes (in liners) for the party - for the adults. Wait now, who am I kidding?... for me!! You see, I know kids love this sugary icing, but I do not dig it much. Sure, a little taste is fine. But to top a whole cupcake, I want a creamy frosting that is smooth and rich but not super sugary. I will post a photo next week of this other batch of cupcakes. I loved them, and couldn't keep from picking at them all week long! Then yesterday, I made another batch to bring one along to my daughter's preschool 'party day' so she doesn't eat the egg/dairy one they provide. So, again, more for me to dip into all weekend!!
I think I will do two versions of these cupcakes for my cookbook, since the kids loved them and they are just so fun! Thanks again, Julie! :)
