Vegan Cupcake Cones!

After yesterday's comments, were you guys wondering about these Cupcake Cones?

Aren't these adorable??! The idea came from Julie Hasson. If anyone knows cupcakes, it's Julie! She is the author of 125 Best Cupcake Recipes (as well as two cookbooks on chocolate). So, I asked Julie if I could 'veganize' her idea for my next cookbook, and she graciously agreed!

What fascinates me with these cupcakes is that you bake the batter in the cone, and the cone does not burn... or even really brown! Very cool!! I used a basic vanilla batter, and then topped it with my new Kids' Frosting recipe. This frosting is buttery and sugary, and again tinted pink with beet powder (I don't DARE tell my daughter that)! I should have topped them with some of those sprinkelz I had leftover, but I forgot!

I also made another batch of standard cupcakes (in liners) for the party - for the adults. Wait now, who am I kidding?... for me!! You see, I know kids love this sugary icing, but I do not dig it much. Sure, a little taste is fine. But to top a whole cupcake, I want a creamy frosting that is smooth and rich but not super sugary. I will post a photo next week of this other batch of cupcakes. I loved them, and couldn't keep from picking at them all week long! Then yesterday, I made another batch to bring one along to my daughter's preschool 'party day' so she doesn't eat the egg/dairy one they provide. So, again, more for me to dip into all weekend!!

I think I will do two versions of these cupcakes for my cookbook, since the kids loved them and they are just so fun! Thanks again, Julie! :)

So those are regular cones?
Amazing, amazing! I'll get the cookbook just for this! (j/k- you know we've been waiting for the c/b long before this post, right?)

These look neat!!!

Oh! I realized it was SPELT Flour that I used! Thanks for the great comment on my blog.

Just posted another list...question about Almond Milk...when/if you have time!

Everyone who tried the muffins loved them! I had 3 people ask me to make more! ME! Can you beleive it?

Hi Michelle... I know!!! That was my response too!

Yes, Kai, you can use just regular ol' cones. I have used the organic brand too, but any standard cone works fine (so far I've found, anyhow)! Thanks, btw, you're sweet!

Hi Harmonia! I will pop by to check out your q's about almond milk. I'm SO happy that you (and your friends) enjoyed the muffins. You CAN bake, see!!! No more talk of you not being much of a cook or baker, alright?! :)

Thanks laine! Every time I have tested them I think "hmmm, what if they brown or burn this time"... but nope! Such fun!!

The cones look so yummy.

Regarding the sprinkles that you used for your daughter's pretty cookies, I saw some at our health food store the other day. There was no price on the box or the shelf so that must explain the dust that was collecting on the fun-looking box.

Do you know of a good recipe for dinner rolls or kaisers that uses flour other than all-purpose? The idea of kneading bread scares me but I'm willing to give it a try. Now that I've baked cookies and scones I can bake ANYTHING! :-)

My mom used to do something like this when we were little, except with pudding or applesauce and sprinkles. Honestly, I bet you could put anything in an ice cream cone and kids would gobble it down!

Oh, and sweet pea, I have a wonderful recipe for 100% whole grain bread (a combination of whole wheat bread flour and oats,) that is a little time consuming, but it's not terribly dense, and pretty fabulous! Let me know if you want me to pass it along.

Catherine, that would be great. Perhaps you could post it in a comment on my blog. All comments get sent to my e-mail address. Many thanks.

Dreena, I'm spending my Friday night reading about Ayurveda. I rediscovered a book that I bought years ago -- Simply Ayurveda by Bharti Vyas.

Cute idea! I'd like to investigate what makes the cone not burn. Hmph.

I'd be picking at 'em all weekend too!

That's a really cool idea. How is it that the cones don't brown or burn?

I guess I should have read the other comments before posting my own. I said pretty much the same thing as everyone else. DUH!

(But I still want to know)

Wow, that is so unique! I am totally captivated by this cone-baking idea. How cool!

Hi sweet pea... well, that's funny about the sprinkles - I guess they were priced just a *little* too high at your store!! You know, I don't bake bread from scratch (that's more work than I want to take on right now!!), but I'm sure there you can sub spelt or w/w flour in most recipes quite easily. Good luck, and if I come across anything specifically, I'll let you know!

Oh, just noticed Catherine's comments - thanks for helping with that, Catherine!! Also, I love the idea of your mom filling ice cream cones with pudding or applesauce and then decorating them. What a sweet memory! Hmmm, your idea of putting 'anything' in the cones and kids will eat them - I think that's true... should I try salad or kale? Ha!

Sweet pea, I'd love to hear what you think of the Ayurveda book - so much of it just fascinates and intrigues me, and really does reflect people in my family based on their 'doshas'. It's really amazing I think!

Thanks, Leslie! Yes, it makes you wonder how they can come out of baking looking much like they did going in - ??!! Probably means they are not the best for us to eat - ha! :)

Hi Carrie! I still want to know too!!! :) Or, maybe I don't!

Hi kleopatra, thanks... it is quite cool, I agree!

Dreena, what a cute idea! How full do you fill the cones with the batter? I may have to try this the next time my daughter needs treats for her class. Thanks!

Dreena said...

Hi Susan, thanks! (though I can't really take credit for the idea!!) So far with my testing, I have found that you only need about 2 tbsp of batter in the cones (at least that's with the batter recipe I have been using). It doesn't seem like much, but I guess because the cone is so narrow, that the batter only has 'up' to go, and so too much in there ends up overflowing. Good luck if you try them out! :)

"Kale Konze?" Maybe not. :)

This is not the post to be reading late on a Saturday night when I have a craving for sweets! These cones look adorable - I know even my nearly grown up girls would love them :-)

Dreena said...

Funny, Catherine! I might just be trying something like that here for my daughter, though!! :)

Hi Nancy! I know, those late-night munchies are what get us, aren't they? Well, those, and the mid-morning munchies and mid-afternoon munchies! For me, it's almost always a sweet... oh dear! :)

Hey Dreena. I'm so happy I found your website cause I just want to tell you that I made two recipes from your cookbook Vive le Vegan, fudgy brownies & maple walnut cookies.. and they were SOOO GOOD! Thanks for such a great book : )

Yeah, that's kinda freaky Dreena, looking the same. Anyway, I found those sprinkles you were talking about at our co-op for $1.99 USD. I don't know if that's good or bad but you thought yours were expensive, so here's one comparison. Also, did you get my email? They keep shooting back to me because the file is sooo huge, but I hope you get it. Let me know in my comments if you did not.

Hi Dreena,

I haven't been on line in the past couple of days, so I was so excited to see your pics! Your cones are soooo cute!! Where did you find the beet powder? I love pink cupcakes, but don't like using fake colors.

They are adorable!! I can't wait to try your vegan version : )

Thank you so much, Becky! Good to see that you've hit the dessert section straight away!! That's always where I look first in cookbooks - maybe I should put the dessert section of my next cookbook right at the beginning of the book?! :) I'm super pleased to know you have enjoyed both of those recipes - thanks for letting me know, too!

Hi Leslie, that's definitely cheaper than I paid for mine. About 3.50 Cdn is what I paid - yours would have been about $2.25 Cdn, which is MUCH better, but still a bit pricey for how much you actually get in that box - two little bitty packages! Oh, I did get your e-mail with the (fabulous!) pics - I will get back to you about it again - thanks!

Hi Julie!! Well, I'm glad the 'master' cupcake maker gives the thumbs up on these!! :) Next time I am going to decorate them a little more - to look like a real soft serve I think. Anyhow, I got the beet powder at a health food store. If you can get it bulk, that might be best. I got a rather big amount that was already packaged (maybe 2 cups or so), and it wasn't that expensive, but I don't know WHEN I'll use it all up! You really just need to buy a tbsp or two at a time, because you use just a few pinches to tint what you are making. Anyhow, thanks for your comment on these, and more importantly, thanks for the idea! :)

Hi Madelyn!!... thanks!!
