Lime Sucker Pie


Not all great desserts are chocolate (though, many are)!

Pictured is my Lime Sucker Pie for Eat, Drink, and Be Vegan. Fresh, tangy-sour and sweet, and absolutely perfect with a little non-dairy vanilla ice cream or also with this vanilla cream.

(and I was lucky to find some organic blueberries - on sale - at our local health food store... bonus!)

You sour citrus lovers (and anyone missing Lemon Meringue Pie) will love this one, since lemons can also be substituted, easily and deliciously.

Hi Dreena,

I just wanted to let you know that I re-tried the P-Nut Butter and Chocolate bars using Sunspire grain sweetened chocolate instead of carob chips and it worked out perfectly!! I love them.

Mmm... It's been quite a while since I had a nice lemony/limey slice of pie. I think I need a slice of this right now. The blueberries are a lovely touch.

Dreena, you're really talking to me here, I'm one of those freaks that will choose sour citrus desserts over chocolate most of the time.
Our Cost-co (do you have those stores?) sells 4 lb. bags of frozen organic blueberries - nice to have on hand. Cute recipe name!

Dreena, this pie looks fabulous! I can't wait to try it (you'd think I'd be sick of pies by now, but for some reason I'm not). Plus I'm a sucker for anything citrus!

This pie wedge just screams for a fork to dive into it. I love how it comes out in a nice clean, solid wedge and not all squishy.

Hi iloveoatmeal, I've made this one soy-free, so it's suitable for folks with soy allergies, and it's also a little extra tart I think, and has a firmer texture. (may be easier to make too)!

Oh those blueberries complement the lime so well, not only in taste but in color too. But then again I almost never turn down anything that involved blueberries. I love the name too! And I bet I'm right in assuming you used a Wholly Wholesome Pie Crust.???

Hey Teresa, oh yeah, I forgot to mention that... absolutely used a Wholly Wholesome crust - I LOVE them, and using it makes this a very, very easy and quick pie to make. Thanks. :)

I could so go for a slice of that pie right now! I used to be one of those people that would always pick chocolate over citrus desserts, but my tastes are changing- bring on the lime sucker pie! (and the lemon squares, the lemon/orange sorbet, the key lime cheesecake...)
