100 and counting...

In the finished pile for Eat, Drink, and Be Vegan:

Banana Zucchini Muffins. With this addition, I now have 100 recipes totally completed for the book. I still have a number in the works, and a few new ones to try, but let me tell you I'm celebrating inside to reach this 100 mark!

These muffins are light and moist, are wheat-free, and can also be made with applesauce instead of bananas (since we don't always have those overripe bananas sittin' on our counter tops)!

Congratulations Dreena!!!! What a milestone. I love zucchini recipes, esepcially when we have armloads of them from our garden in the summer.... actually this summer we hardly had any zucchinis because we ate all the flowers before the vegetable could grow! LOL!

Anyway, way to go girl. That deserves a woot! You are getting there!!!!! Can't wait for the cook book!

Oh my gosh! My mom made zucchini muffins when we were young, and they were so good! I cannot wait to try yours! And congrats on reaching 100!

Mmm... they look great. The variation of Peanut Better cookies on my counter right now taste great too! These are gluten free, and actually I switched from peanut to cashew butter with great results too. Instead of wheat flour, i used part ground oats, part rice flour and part arrowroot starch. They are delicious. I have been experimenting with gluten free baking because I am always starving (must because I am nursing my little piglet) and I am so enjoying the yummy snacks! Thanks Dreena!

I <3 Zucchini Muffins! They are my latest easy on the go breakfast. I have been making the ones from "The Vegetarian Family Cookbook" and they are quite scrumptious! BUT, I am sure yours will give them a run for their money :]

Wow Dreena- 100 recipes, how exciting. This is quite a huge leap in the process of your 3rd cookbook. Much Congratulations to you. In the summertime my mom always used to make zucchini bread (non-vegan of course) with the overflowing zucchini from our garden. I sure do miss it, so I'm looking forward to your healthier vegan version.

Melissa (West), I love zucchini flowers - well, I've loved seeing them on shows and occasionally at markets - but I've never eaten them. What do they taste like, and how did you prepare them? I usually see them fried somehow. Is that what happens when the flowers are picked, the zucchini stops growing? I am not well versed in gardening!!

Melissa, I don't think I even ate zucchini until I was in my twenties! Funny - even though my mom cooked and baked a lot, the range of veg and fruit we had at that time in Newfoundland was more limited. Now you can get pretty much everything there, but I remember growing up only knowing iceberg lettuce in salads, and mostly boiled root vegetables.

Hi Michelle, that variation on the cookies sounds awesome! Yeah, really you can sub any nut butter in that recipe - almond, cashew, hazelnut - though seed butters would be a bit bitter I think. Kudos to you converting them to gluten-free - that can be tricky - and to do it as a nursing mom... hats off to you!

Teresa, you know that's very interesting, I have never thought about doing a bran muffin. When I think about it, I don't normally see/hear about vegan bran muffin recipes either, though for years bran muffins were the most popular thing, weren't they? You've planted a seed with me on that - not sure if I'll get to it for this book - but I'm going to work on a recipe I think. Thanks...

How did your sister's trip to Metro Detroit work out? Hope they were able to find some good food to eat :)

Hi Emmy! Thanks... My sister and her family just returned this weekend - I've chatted with her by phone for a few minutes, and next weekend we are getting together to catch up about the whole event and what else they did, saw... and where they ate! She did mention that they made it to La Shish - and LOVED it. She said the vegetarian platter was phenomenal, and they also had a lentil soup that they loved. They also got to Ann Arbor and she mentioned they would have loved to spend more time there. Thank you again for all the time you spent compiling info for me/them for their trip. I know they really appreciated it, and I can't wait to find out more about all they did and if they had other great food there. Thanks Emmy! :)

As you continue to add more fantastic recipes to the mix for the new cookbook it gets harder and harder for me to wait for its publication. I guess that means that in 2007 I should rededicate myself to trying more VLV and TEV recipes like Michelle in anticipation of the next book. But, if you ever need anyone to test a recipe for you. Don't hesitate to ask! I have gained so much enjoyment from you previous books and I can't wait to add these new muffins to my repetoire.

Dreena. I only ever had them in muffins when I was young...I don't think I ate zucchini as a "vegetable" until I went vegan!
