I Scream, You Scream


Oh yes for...

Egg Nog Ice Cream Pie with Butter Rum Sauce (because what's egg nog without a lil' rum?) for Eat, Drink and Be Vegan.

Oh my! I DO scream... actually squeal with sweet delight!

Shamelessly simple to make, and just perfect for a holiday dessert, but really why wait for Christmas to eat it?!

The Butter Rum Sauce is not too boozy - just a couple of tablespoons of rum for flavor, and some (or perhaps all) of the alcohol burns off through cooking.

Two quick, cute stories to end my post:
While grocery shopping with our older daughter the weekend, she hovered around the refrigerated blocks of cheese. I heard her saying "poor cows, poor cows". I've never really explained to her how it hurts cows to drink milk and eat cheese, but she seems to have a natural sense knowing that animals are not food. Then, when putting her to bed last night and saying prayers she interrupted me with "and please make sure people do not eat animals".

If only we listened more to the wisdom of kids...

That pie looks like it could turn an omnivore vegan. Not that we're out to convert, but hey--when the vegan food is this good, who needs cholesterol and added fat?

Your daughter is so sweet. That's interesting she knew about the dairy, many adults don't even know what they are eating!
I wish people didn't eat animals either, how heartbreaking.

That's good that your daughter already understands that eating milk and eggs and flesh and such is harmful to animals, how old is she?

Hey Urban Vegan, I'm all for converting with desserts if that's what it takes!!

Aimee, I'm happy! And you will be too! Actually, though I have made chocolate crusts in the past with chocolate cookies (like the Newman's brand w/o the cream centres), I now use Wholly Wholesome crusts whenever I can. They are lovely, convenient, and turn pie-making into a 10 minute gig!

Ha, Jaxin breathe slowwwwwly. But eat quickly... before anyone else grabs some of that pie. Kidding, us nice little vegans all share.

I'll call you Orangie! Thanks, yeah, she's had this deep concern and feeling for animals for a couple of years now. She is in kidergarten, and started to make the connection about our food and animals about a year or more ago. I'm pretty amazed myself at your cooking interest and talent at such a young age... very impressive, kudos to you!

Thanks Bazu, I'm with you there. I remember having such compassion and concern for stray animals, and taking care of stray cats on our doorstep, but then you know, we ate meat and such and there was no connection. I lost that level of care going into adulthood too while eating meat. Now I see our daughter and it's incredible how much she cares. She still fights with her sister most of the day, but boy she cares about animals!! Ha!!

What?? Scottishvegan... never eaten ice cream pie?? You must change that - and soon!! I have ice cream pie recipes in both of my books, but even simpler than those you can soften a quart of soy ice-cream (any kind you like best), transfer to a prepared graham crust (I LOVE Wholly Wholesome brand), then refreeze. Once frozen, remove for about 5-8 min's before cutting, then slice and feel the happiness! (of course a sauce like hot fudge never hurts). :)

Kleo, OMG, you just brought back butter rum life saver memories for me!!! Those were my favorite flavor, and although I didn't have them in mind when I made that sauce, perhaps somewhere, subconsciously, they were calling out to me!! Cool, thanks!

Oh Dreena, you are such a bad influence! ;) I have just gone and found the recipe for Cashew-Chocolate Crumb Ice Cream Pie in Vive. It sounds so yummy!! I would love to make it, but I think I will have to save it for a special occasion when I have company or I may eat it all myself!! :)

Ohhhh, but Scottish Vegan, it can be kept in the freezer for a while, so you can take out a leeettle slice for yourself, then put it back in!! Then another bitty slice another day! You get the picture. Yes, I am quite naughty coaxing the sweets... :)

That pie looks amazing! I can't wait until I get a new fridge. Presenty my freezer wouldn't be able to make a pie...it would be an ooey, gooey, mess... I need one that keeps frozen things really cold.
